Is this not one of the world’s most perfect foods? Easy, seasonal and fresh. Food that can be on our plates and in our bellies in minutes.

And come on – TOAST! (We all know how I feel about it. 😉 )

Minty Pea and Boursin Bruschetta

Hearty sliced Italian bread grilled to a golden crisp then adorned in the perfume of the gods – fresh garlic. Not to mention the abundance of toppings, simple or extravagant, that can be used to dress it up.

While living without a kitchen for the past couple of months, bruschetta was a practical and delicious meal. I am astounded that I don’t share it more than I do!

Don’t be surprised if bruschetta and crostini continue to make appearances throughout the upcoming days and months.

Now. About this Minty Pea and Boursin Bruschetta. I was inspired to make this bruschetta based on a recipe that I found by Dan Kluger, for Minty Pea and Chèvre Toast. Oh so good.

I must admit, I modified his recipe a bit, as Chèvre and I have a tendency to give each other the side eye whenever we show up at the same party.

I have tried to like it, but alas, goat (Chèvre) cheese and I did not become fast friends.

Lucky for us, many fine substitutes exist for goat cheese:

  • Boursin – one of my all-time favorites!
  • Mascarpone
  • Cream Cheese
  • Ricotta
  • Feta

Minty Pea and Boursin Bruschetta

The components of this delightful summer nosh:

  • Italian bread
  • Garlic cloves
  • Olive oil
  • Boursin Cheese (I used Shallot & Chive)
  • Fresh lemon
  • Sweet peas
  • Fresh mint
  • Salt & pepper

If you happen to love Chèvre, like so many do, feel free to substitute for the Boursin.

This Minty Pea and Boursin Bruschetta is delicious! With the creaminess of the Boursin and the flavor of the minty sweet peas along with the zing of the citrus – we have here the perfect bite!

Description

Should you find yourself hungry for simple and delicious during these warm weather days, Minty Pea and Boursin Bruschetta is your answer!


Ingredients

Scale

4 slices dense Italian bread

2 large cloves garlic cut in half, lengthwise

1/2 cup olive oil, divided

4 oz. Boursin cheese

Juice and zest of 1/2 lemon

2 cups fresh peas (or frozen, thawed)

3 sprigs of mint, roughly chopped

Salt and cracked black pepper


Instructions

  1. For the bruschetta, prepare a medium-hot fire in a charcoal grill or barbecue for direct grilling.
  2. Arrange the slices in a single layer on the grill rack.
  3. Once they are golden crispy and a little bit charred around the edges, flip them. (3 – 4 minutes per side.)
  4. Transfer bread to a platter and immediately rub the garlic halves over one side of the bread and brush lightly with olive oil.
  5. In the meantime, in a small bowl, combine peas, mint lemon juice, zest, salt and pepper.
  6. Build the bruschetta by topping the grilled bread with Boursin and the pea mixture.
  7. Drizzle with a bit more olive oil and lemon juice and serve.

    I was just saying that I need some new recipes for mint, our herb garden is going crazy this year. I love the combo of peas and mint, especially blanketing creamy boursin cheese and crispy toast. Love these, Annie!

    What a fabulous combination. I love Boursin, but I make it myself. I started doing it 30+ years ago when it was too extravagant to purchase. It’s fun to change up the herbs. But anyway, I can afford it now and I want to make these!
