Should you find yourself hungry for simple and delicious during these warm weather days, Minty Pea and Boursin Bruschetta is your answer!
Ingredients

4Â slices dense Italian bread
2Â large cloves garlic cut in half, lengthwise
1/2 cup olive oil, divided
4 oz. Boursin cheese
Juice and zest of 1/2 lemon
2 cups fresh peas (or frozen, thawed)
3 sprigs of mint, roughly chopped
Salt and cracked black pepper
Instructions
- For the bruschetta, prepare a medium-hot fire in a charcoal grill or barbecue for direct grilling.
- Arrange the slices in a single layer on the grill rack.
- Once they are golden crispy and a little bit charred around the edges, flip them. (3 – 4 minutes per side.)
- Transfer bread to a platter and immediately rub the garlic halves over one side of the bread and brush lightly with olive oil.
- In the meantime, in a small bowl, combine peas, mint lemon juice, zest, salt and pepper.
- Build the bruschetta by topping the grilled bread with Boursin and the pea mixture.
- Drizzle with a bit more olive oil and lemon juice and serve.
