Summer Skillet Gnocchi with Burst Cherry Tomato Sauce comes together in minutes and is a tried and true weeknight recipe!

So here we are. My first {NEW} post since the completion of our kitchen. Wowwww! That was an adventure! But boy was it worth it! We are thrilled with the outcome.

After two years of thinking we might want to sell and start anew some place else; then finally deciding ‘there’s no place like home’, we are feeling doubly rewarded.

Not only do we have a new and sunny space situated in the heart of our home, but we get to enjoy the truest comforts of home. And by that I mean – we get to wake up every morning in a domicile filled with sweet memories twenty-three years in the making, plus, we remain in a neighborhood that we adore. Win-Win!

I plan to share before and after photos of the kitchen real soon, but we’re waiting on a couple of things, namely, our table and chairs. 😉

Sooooo – with all that time to think about the first post I’d share – a post that would capture the kind of cooking I love to do, one that is a mainstay in my kitchen, one that packs a punch in the summer-comfort-food department – of course it had to be pasta!

I think we ate more bruschetta over these past many weeks than anything else.

The tomatoes and basil lining the bins at the supermarket are to die for.

I suppose I could have shared my recipe for classic bruschetta (and who knows, maybe I still will 😉 ) but this package of gnocchi was burning a hole straight through my newly built grey mist hued cupboard and refused to be ignored.

So here we are…

What is this simple summery meal composed of?

  • 3 pints cherry tomatoes
  • 3 Tbsp. olive oil
  • 2 – 3 plump garlic cloves, chopped
  • Salt and freshly ground black pepper to taste
  • 1/2 cup fresh basil plus more
  • pinch of red pepper flakes
  • 1 pound shelf stable gnocchi cooked according to package directions
  • 1 cup mozzarella peals (small bocconcini)

And how easy is it to make?

  1. In a 12-inch cast-iron skillet, heat olive oil over medium heat. Add the garlic; cook until softened. Next, add the cherry tomatoes in one layer.
  2. Season with salt and pepper.
  3. Cook for 5 to 7 minutes, tossing occasionally, until tomatoes begin to lose their round shape.
  4. Stir in basil and a pinch of red pepper flakes.
  5. Add cooked gnocchi.
  6. Cook gnocchi in the sauce until heated through.
  7. Add mozzarella, stir until it just melts.
  8. Garnish with more basil.

Ingredients

Scale
  • 3 pints cherry tomatoes
  • 3 Tbsp. olive oil
  • 2 – 3 plump garlic cloves, chopped (I used 3)
  • Salt and freshly ground black pepper to taste
  • 1/2 cup fresh basil plus more, divided
  • pinch of red pepper flakes
  • 1 pound shelf stable gnocchi, cooked according to package directions
  • 1 cup mozzarella pearls (small bocconcini)

Instructions

    You can’t go wrong with fresh tomatoes this time of year. And of course, what goes with them better than garlic, basil, and mozzarella? Gnocchi, I guess. I’ve never had it, but it sounds like a home run.

    Hooray! Hooray for a new kitchen and in a home filled with memories, Annie! An adventure and a decision that must have been hard to make at first. I can’t wait to see it!     I have a package of gnocchi that I haven’t been quite sure what to do with, but now I know! This recipe just jumps out to me. I can’t get enough tomatoes and basil this time of year, and love the added bocconcini!
