Apple Cinnamon Yogurt Cake

Jump to Recipe·Print Recipe

Apple Cinnamon Yogurt Cake is a sublime treat! Perfect with your first cup of coffee or espresso!

Apple Cinnamon Yogurt Cake

I made this Apple Cinnamon Yogurt Cake for a long weekend in Lake Placid. I’ve discovered that the more we visit Placid, the more I enjoy having homemade meals at the ready.

This cake makes for an ideal breakfast and brunch.

As Dom remarked – because it’s super moist (from the yogurt) and apple-y (from the apple 😉 ), yet not overly sweet, it’s a nice way to start the day.

We’re never opposed to lingering over a pot of coffee, or an espresso or two, with a plate of satisfying nibbles before heading out in the morning, and this cake ticks all the right boxes.

INGREDIENTS FOR APPLE CINNAMON YOGURT CAKE:

  • Flour
  • Cinnamon
  • Salt
  • Sugar
  • Butter
  • Eggs
  • Greek yogurt
  • Apples
  • Lemon zest

Another thing I like about this cake: it travels well.

It’s compact, easily stored, sturdy, tender, flavorful, and perfect with a cup of coffee.

You can pre-slice and munch while you’re on the road, or wait until morning and have a homemade breakfast-treat waiting for you.

Plus – this little baby makes for a stunning dessert.

With its crackly-crunch of a top layer, you might be tricked into thinking that you’re biting into a candy apple.

But then you’ll remember that you’re not…

That it’s cake.

It could happen… 😉

Either way – it’s a real treat! One that you deserve!

Description

Apple Cinnamon Yogurt Cake is a sublime treat! Perfect with your first cup of coffee or tea!

Ingredients

Scale
  • 1 1/3 cups flour
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 1/2 plus 1/3 cup sugar
  • 7 oz. melted butter
  • 2 eggs
  • 1/2 cup Greek yogurt
  • 3 apples, peeled, cored and thinly sliced
  • zest of 1 lemon

Instructions

  1. Preheat oven to 350 degrees.
  2. Butter a 9″ baking pan.
  3. In a medium sized bowl, mix together the flour, cinnamon and salt.
  4. In a separate larger bowl, beat the 1/2 cup of sugar and melted butter with a hand mixer until light and airy, about 8 minutes.
  5. Add the eggs, one at a time, beating for a few minutes after each addition.
  6. Reduce the speed of your hand mixer and add a third of the flour mixture, mix in, then add 1/2 the yogurt.
  7. Repeat until all ingredients have been mixed together.
  8. Next, stir in the apple slices and lemon zest.
  9. Pour the batter into the buttered baking pan.
  10. Smooth with a spatula.
  11. Sprinkle the remaining 1/3 cup sugar on top.
  12. Bake for 40 – 45 minutes, or until the top is golden and a toothpick comes out clean.

I can’t wait to make this. I’ve been craving something a bit sweet. Not a big dessert type of sweet, just something to enjoy while drinking my coffee. Looks super easy too.

“biting into a candy apple” oh my, Annie! Absolutely love a cake with multiple textures going on. I could linger a while over this cake too… and I would! Your ingredients tell me that this is indeed a tender cake, with the yogurt addition! I’ll be putting this one on my list. Afterall, what’s better for breakfast, than cake! Love this! Thank you, Annie!

Sounds just delicious. It’s the kind of cake I like to have around the house – so you can have a slice whenever you feel like it – not too sweet and full of apple goodness. Thanks for the recipe, Annie!

This cake looks stunning! Love the apple and cinnamon- the best flavour combo out there! And I bet the yogurt makes the cake all moist and light. Delicious.
