With all the comings and goings at the end of summer, I’m always on the lookout for the thing… The thing that helps to create a dinner that’s both delicious and quick to assemble.

Here it is!

Alongside Nick’s delicious request for meals ‘he had to have’ before heading back to start his senior year of college (WHATTTTT????!!!!), there are some days where the idea of making a fabulous homey meal and getting it to the table quickly is the top priority.

Because some days are just meant for other things…

Like mall dates and school shopping and our annual meal of authentic Mexican food. Things like moving furniture, hanging posters and buying stock in Swiffer Dusters and Pine-Sol. Our boy lives in a house off campus with four of his good buddies. It’s a house on “the hill” on a street peppered with college students. An older home which I can imagine in its heyday was absolutely stunning. And now it’s um, stunning in new ways… posters, all the very. large. posters… athletic equipment…sneakers…and, oh, other items college kids tend to keep on hand…like….computers and books. What’d you think I was going to say? (wink)

We spent the better part of last week getting Nick set up for his final year. And although we’ve been moving kids in and out of college dorms and apartments for the last eight years, you’d think we’d be used to it. You’d think that the unfortunate truth – time is fleeting – might actually help ease the sting of their moves, knowing that we’ll see them soon, or in Nick’s case, that he is just a 20 minute drive from home and that Sunday dinners together are a real possibility……but it still hurts.

That little lump in my throat, the one that shows up this time of year every year for the past eight, and I, have become really good friends. She’s like, “I’m baaaack!”. And I’m like, “Coffee’s on…get comfortable…I know you’ll be sticking around for a few days.”.

So, where was I? Ahhh – yes – sauce.

I mean, what’s more comforting than a beautifully designed pasta smothered in a rich and hearty tomato sauce that is dotted with baby sweet peas and sprinkled with Parmesan?

Not much.

This is a meal that’s great when you’re in a hurry, or, when you’re not in a hurry but could use a little comfort. Buon Appetito!!

Description

Stozzapreti with Sweet Peas and Parmesan tastes all the better wrapped in Ragú!


Ingredients

Scale
  • 1 lb. strozzapreti pasta
  • 1 jar Ragú
  • 2 cans sweet peas, drained
  • 1/3 cup freshly grated Parmesan cheese

Instructions

  1. In a large pot of salted boiling water, cook the pasta according to package directions, until al dente.
  2. In the meantime, warm the sauce in a small saucepan over medium heat.
  3. Drain the pasta and return to the warm pot it cooked in.
  4. Add the sauce and peas and gently toss with the pasta.
  5. Serve at once with a sprinkle of grated Parmesan.

    Awe, you’re a good mom and make me realize how I miss mine, although I’m WAY past the 20 year mark! Nick is lucky.
    As for this two things: I have never heard of Stozzapreti, so thank you, and peas seem an interesting addition. One I’d gladly try if this were my dinner!

    The house I moved into in my college years was not stunning, even in its heyday. But I loved it and learned how to fend for myself a little more there. I know you must be in your emotional mama state with all of this, but at least your son will learn to keep house. Maybe? 🙂
    This pasta can’t hurt when it comes to luring him back home. I’d go a long way to get some of this!

    College….and senior year in college! Wow!!! So exciting for him. This pasta is a great send off to college. It will remind him of all the great food his mom makes when he’s eating in the cafeteria 🙂 I still love going home to my mom’s home cooked meals. This pasta looks like a winner!

    Well yay for Nick and his last year of college!! I know it must be painful for you, how they grow up SO fast, but I also know how incredibly proud of all your children you must be!     My sons also lived with 3 friends during the college years. Five boys in one house … I’m so glad it wasn’t mine. haha I once just had to clean it on a visit. After our visit later in the night the roommates came home and stopped at the front door and exclaimed, “Man, it smells good in here!” Though I’m sure the smell of a home cooked meal would have thrilled them I think they knew that also was a work of love.

    This was such a lovely post to read- as the kid going off to college, I’ve always kind of wondered how my mom felt about it. Because on the outside she’s super excited for me and supportive, but I know we miss each other. This pasta is total comfort food= love it!

      Our tradition has always been to make the kids’ favorite meals every night for about a week before they leave. It’s anything from grilled cheese to chicken satay and everything in between…we ended with meatball subs and antipasto salad this time… But I must say – these Ragú Homestyle Sauces hit the spot on busy days!
