They say a picture is worth a thousand words…or just one word…as long as it’s the right word.
Okay, so I made up the last part, but it makes sense to me. And that word is: delectable.
Today is Lauren’s birthday! WooHooo! To celebrate, I made her a sandwich…which I promptly ate on her behalf. Waaaa. I’m sure you’ve gathered, she is not here. But she is in a city where things are hap-pen-ing. And although she’ll not be at a loss for wonderful food and exciting activity, I’m hoping this little walk down memory lane with stops to include some of the local flavors Luc grew up eating, she’ll experience a sentimental stirring and a happy birthday moment as only food memories can bring.
I don’t think Luc has ever met a breakfast sandwich she didn’t like. This Spicy Sausage & Egg Sandwich with Steakhouse Onion Aged Cheddar & Crispy Potatoes has Luc written all over it. Enjoyable. Dramatic. Unique.
I tried to pack as much ‘home’ into this celebratory meal as I could. I’ve included an onion flecked soft round roll which hails from Mastroianni Brothers Bakery out of Schenectady, New York. A Tuscan-born breakfast sausage made of Italian seasoning and the finest cuts of meat from Gianelli out of Syracuse. Steakhouse Onion Aged Cheddar from Yancey’s Fancy out of Corfu, and finally, farm fresh eggs from Hudson Egg Farms out of Elbridge (where it doesn’t get any more local as our kids went to school together!).
Although the majority of this sandwich is comprised of locally grown or manufactured products, sadly the russets and Calabrese peperoncini are not. We’ll give them a pass though, as they punctuate this sandwich, perfectly. I made homemade chips for an extra layer of crunch and added crushed red pepper for a hit of spice that Luc will remember ’til she’s 26.
This is a fun one.
From the pillow-y roll to the spicy sausage and crispy chips, to the egg over-easy dappled in shreds of savory onion-y cheese and extra hot peperoncini…this sandwich is a force to be reckoned with…just like our girl.

Spicy Sausage & Egg Sandwich with Steakhouse Onion Aged Cheddar & Crispy Potatoes
- Yield: 2 1x

Ingredients
- 1 Tbsp. olive oil
- 1 russet potato, thinly sliced
- 1/8 tsp. salt
- 1/8 tsp. freshly ground black pepper
- 2 (1/3 lb.) Italian sausage patties
- 2 large onion rolls
- 2 eggs, fried over easy
- 1/2 cup shredded cheddar
- 1 – 2 Tbsp. Calabrese peperoncini
Instructions
- In a medium skillet over medium heat add 1 Tbsp. olive oil.
- Using a mandoline, slice russet. Dry the potato slices with paper towel before frying.
- Cook potatoes until browned and slightly curled on the edges. Add salt and pepper as they cook.
- Remove from stove and set aside.
- In the same pan fry sausage patties until browned and cooked through to 160 F.
- In a separate small frying pan, crack 2 eggs and cook until just done.
- In a each large onion roll stack sausage patty, a couple potato chips, 1/4 cup shredded cheddar, fried egg, and a smear of red pepper on top bun.
- Serve.
