Spicy Sausage & Egg Sandwich with Steakhouse Onion Aged Cheddar & Crispy Potatoes

Ingredients

  • 1 Tbsp. olive oil
  • 1 russet potato, thinly sliced
  • 1/8 tsp. salt
  • 1/8 tsp. freshly ground black pepper
  • 2 (1/3 lb.) Italian sausage patties
  • 2 large onion rolls
  • 2 eggs, fried over easy
  • 1/2 cup shredded cheddar
  • 12 Tbsp. Calabrese peperoncini

Instructions

  1. In a medium skillet over medium heat add 1 Tbsp. olive oil.
  2. Using a mandoline, slice russet. Dry the potato slices with paper towel before frying.
  3. Cook potatoes until browned and slightly curled on the edges. Add salt and pepper as they cook.
  4. Remove from stove and set aside.
  5. In the same pan fry sausage patties until browned and cooked through to 160 F.
  6. In a separate small frying pan, crack 2 eggs and cook until just done.
  7. In a each large onion roll stack sausage patty, a couple potato chips, 1/4 cup shredded cheddar, fried egg, and a smear of red pepper on top bun.
  8. Serve.
