- 1 Tbsp. olive oil
- 1 russet potato, thinly sliced
- 1/8 tsp. salt
- 1/8 tsp. freshly ground black pepper
- 2 (1/3 lb.) Italian sausage patties
- 2 large onion rolls
- 2 eggs, fried over easy
- 1/2 cup shredded cheddar
- 1 – 2 Tbsp. Calabrese peperoncini
Instructions
- In a medium skillet over medium heat add 1 Tbsp. olive oil.
- Using a mandoline, slice russet. Dry the potato slices with paper towel before frying.
- Cook potatoes until browned and slightly curled on the edges. Add salt and pepper as they cook.
- Remove from stove and set aside.
- In the same pan fry sausage patties until browned and cooked through to 160 F.
- In a separate small frying pan, crack 2 eggs and cook until just done.
- In a each large onion roll stack sausage patty, a couple potato chips, 1/4 cup shredded cheddar, fried egg, and a smear of red pepper on top bun.
- Serve.
