Roasted Strawberries & Pistachios with Vanilla Bean Whipped Mascarpone Crostini will make breakfast or snack time the sweetest spot in your day!

It dawned on me that it’s been a while since I shared a crostini recipe with you guys.
I get the shakes if I go too long without a piece of toast in my life.
Normally I am all about whole grain bread toasted to almost charred (yes, I am a fan of burnt toast!) with a generous smear of natural peanut butter with my first cup of coffee of the day. And although I do think peanut butter toast is a blog-worthy pursuit, once I spotted these berries – it was over. 😉
Who can resist fresh strawberries this time of year?

Other than devouring sweet berries straight from the basket (or chilling in ice cream, baked in a pie, dressing up panini), I love to use them as a topping for crostini!
Warm melty strawberry hearts spooned over vanilla bean sweetened mascarpone….
That’s what I’m talkin’ about!

This crostini is a perfect example of how the little things in life, the ordinary things are. the. best.
Take mascarpone, for example… a mild Italian cream cheese…. cream cheese kissed by angels…. a softer, more mellow cream cheese….
And it doesn’t get much littler than the seeds of a vanilla bean. 🙂

And roasted strawberries? Exquisite.
Their flavor is rich and deep and jammy, and truthfully, it’s all I could do to keep from inhaling these baked berries before the crostini was even the slightest bit toasty.
They’re that good!

So who can resist?

Roasted Strawberries & Pistachios with Vanilla Bean Whipped Mascarpone Crostini

Description
Roasted Strawberries & Pistachios with Vanilla Bean Whipped Mascarpone Crostini will make breakfast or snack time the sweetest spot in your day!
Ingredients
- 4 cups strawberries, hulled and halved
- 2 Tbsp. granulated sugar
- 1 cup fresh mascarpone cheese
- Seeds from 2 vanilla beans
- 8 three-quarter-inch-thick slices of rustic Italian bread
- Drizzle of olive oil
- 1/3 cup shelled pistachios, chopped
Instructions
- Preheat the oven to 350 F.
- Line a rimmed baking sheet with parchment paper.
- In a large bowl, toss together the strawberries and sugar.
- Arrange the berries cut side up on the baking sheet and roast until they are soft and juicy, about 20 minutes.
- Remove from the oven and let cool.
- On a clean baking sheet, place the bread. Drizzle both sides with olive oil, then place in the still warm oven. Remove when the bread is toasted to golden brown.
- In a medium bowl, using a whisk, combine mascarpone with vanilla bean seeds.
- Once the crostini are cool, top each with mascarpone and a couple spoonfuls of strawberries with their juice spooned overtop.
- Sprinkle with chopped pistachios.
- Enjoy!

I’ve never roasted strawberries before, but I can imagine that it takes their flavor to a whole new level – kind of like roasting pineapple. Then piled high on little toasts slathered in mascarpone and sprinkled with pistachios!? Heavenly!
