I have big news! Dom and I are becoming members of Common Thread CSA (Community Supported Agriculture). By purchasing a share, we’re making a commitment to support this local farm as well as the farmers who grow it.

We’ll have access to fresh, in-season, locally grown produce that we’ll pick up on a weekly basis from June through October. As shareholders, our role is vital as we’ll help to contribute toward a vibrant and healthy local food system as well as to provide the farmers with the financial stability necessary to operate the farm in a sustainable way.

The mission at Common Thread is to produce healthy food by using sustainable growing methods as well as to provide the opportunity for people to connect with land and community.

We’re participating in the Delivered Boxed Shares Program which provides a large box filled with 8 – 10 types of vegetables that have been harvested the day before delivery, each week. It will include veggies that are popular but also some less common varieties.

I’ve wanted to participate in a CSA since first reading about Traci’s experience with purchasing a share on her blog, Vanilla And Bean.

Okay, so these root vegetables didn’t come from our CSA but I did purchase them from the organic section of my favorite grocery store…next best thing…

This dish is all about the roots. When combined with a little bit of olive oil and seasoning – we’ve got ourselves a side that is perfectly sweet, seasonal and delicious.

So mangia!

Yep, there’s a very good chance I’ll sleep better knowing that we’re supporting a small local farm and cooking with healthy, chemical-free vegetables.

Roasted Root Vegetables

Ingredients

Scale
  • 2 lbs. total of fresh vegetables like: beetroot, parsnips, celery root and carrots
  • 4 – 5 Tbsp. good olive oil
  • 8 cloves of garlic, peeled and slightly crushed
  • Kosher salt and freshly ground black pepper

Instructions

  1. Preheat oven to 400 F.
  2. Scrub the root vegetables very clean.
  3. Cut into wedges or batons about 1 inch thick, keeping everything around the same size.
  4. Toss with olive oil, garlic, salt and pepper. (Season generously.)
  5. Roast on a baking sheet for 30 – 40 minutes, until cooked through and caramelized.
  6. Serve warm.

    I enjoy all types of vegetables and love roasting them, particularly root veggies like beets. So good for you! Pretty exciting news, Annie! Pretty awesome to have access to lots of locally grown veggies and supporting local farmers at the same time. You’ll never be stuck for fresh veggies, that’s for sure!

    You’re totally right, roasted root vegetables ARE like candy! Yours look amazing. Congrats on your CSA, I’ve always wanted to try it but with two people in my house I’m afraid we’ve have too much food. One day, when I have a bigger house and a deep freezer, I will get allllll the local veggies.

    Love these roasted veggies Annie!! We are going on our 4th year as CSA members at a local farm that is sustainable and organic. We also get our meat from them and I love that we have become friends with the farmers. You will so enjoy your CSA this year and will no doubt be a member every year 🙂

    Good for you, Annie! I need to get on the CSA bandwagon. And these roasted veggies are just my favorite – and so versatile. You can add them to a salad, or puree them with some stock or have them as a side – there are endless ways to use them up! Just delicious!

    I really need to get up with the times more, I have never heard of a CSA but am certainly intrigued and interested. I love root veggies and they way you prepared them here is just so perfect, all the natural flavors really shine through and the colors! This is both a deliciously flavored and visually appealing dish. Take care.

    I’ve thought about doing this myself. But with all my traveling, I’m afraid to commit. Congrats. I imagine it’ll be like Chopped or the Black Box tests I’ve had to take. You open up the box and create from there. I’m excited to see your ‘haul’ and your creations

    I LOVE beets, and root vegetables, and CSA, and sustainable farming! I could go on and on and on! There’s something so magical about having a box of surprise produce show up at your door. The possibilities of how to use everything are endless, but I love the simplicity of your roasted grocery organic root veggies!

    Congrats on joining the Common Thread CSA, Annie! I’ve been meaning to do that since there are a TON of farms around us! And who doesn’t love organic fruits and veggies that are grown locally?! Not I. 😉 I love roasted veggies, so this dish is perfect to me! Simple, yet packed with deliciousness! I could eat a vat of this for breakfast, lunch and dinner! Cheers, friend! xo

I often forget about parsnips and beetroot, so I’m loving these gorgeous veggies. Sounds perfect to go alongside dinner!
