Description

Parsley Pesto and Burst Heirloom Cherry Tomato Crostini…I am convinced…is why my tastebuds were born.


Ingredients

Scale
  • 1 large baguette, sliced on the diagonal about 1/2 inch thick slices
  • 2 – 3 Tbsp. olive oil
  • 3 big bunches (3 cups) parsley leaves
  • 1/2 cup olive oil
  • 2 plump garlic cloves, chopped
  • 1/2 cup grated Parmigiano
  • Salt to taste
  • 2 pints cherry tomatoes
  • 2 Tbsp. olive oil
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat oven to 400 degrees.
  2. Arrange baguette slices on a large rimmed baking sheet and lightly brush both sides of the bread with oil.
  3. Bake until golden, about 15 to 20 minutes.
  4. In the meantime, place clean parsley (minus the stems) in a food processor.
  5. Add 1/4 cup olive oil and chopped garlic.
  6. Pulse until you have a slightly chunky sauce.
  7. Add the remaining oil while processing.
  8. Stop once or twice to scrape down the sides.
  9. Stir in the cheese and season with salt. Place in a small serving bowl and set aside.
  10. Next, in a large sauté pan over medium heat, add olive oil and all the cherry tomatoes in one layer.
  11. Season with salt and pepper.
  12. Cook for 5 to 7 minutes, tossing occasionally, until tomatoes begin to lose their round shape.
  13. Remove from heat and place in a serving bowl.
  14. Remove bread from oven.
  15. Top each crostini with pesto and tomatoes.
  16. Serve at room temperature.

    Oh Annie, I love a great crostni and this is just fabulous! I’m seriously eating with my eyes and so wishing I could reach through the screen and grab the whole tray! Aren’t summer evenings just the best?!     Our yard is being overtaken with basil – YAY!! Fresh basil just around the corner. And your crostini look perfect — for a snack or a meal. I do miss all of the fresh veggies once the frost hits 🙁 I guess that’s why I appreciate recipes like your grape tomato crostini and your roasted grape ones have me wanting to go to the store and pick up a bunch so I can make the crostini.     Well my idea of a perfect summer night sounds EXACTLY like yours. Extra wine and crostini please. 🙂 It truly is the simple, small things in life that make living so grande. I always love your writing, and this post has me wanting to stop working and whip up some crostini, crack open a bottle of wine and relax while taking in the sweet summer air and the company of Boy and Dolce (my Dolce.. not yours! lol) …. if only I could get rid of the pesky mosquitoes and unbearable heat. Anyways, this crostini is GORGEOUS, Annie! Those burst tomatoes are everything! But combined with some pesto and generously topped on some crusty, fabulous bread?! Heaven!     Oh, Annie, you have the best style of writing…so descriptive! And, yes I agree that sometimes the simplest things are the best! I’m all over this recipe. This is just perfect Friday night eats, in my opinion….with that wine, of course 😉 I love nights that I can sit on the deck with hubby when there’s no strong wind and it’s just calm. We try to enjoy the warmer Summer months while we can. We love bits and bites like this and I’m sure we would have a platter to eat as we just relaxed. Pinned, of course 🙂
