These Chocolate Chunk Strawberry Ice Cream Sandwiches are easy to make, scrumptious to eat, and perfect for sweet celebrations!

Hi friends! I’m coming at you today to celebrate a highly momentous occasion! A Virtual Baby Shower for my friend Erin from The Speckled Palate!

Erin is due to have her second baby girl this September so I am happily channeling all things pink! Pink! Pink! Pink! And cookies.
I’ve been wanting to make homemade old-fashioned ice cream sandwiches for a while; and when I was invited to share in Erin’s celebration – I knew exactly what I wanted to make. These Chocolate Chunk Strawberry Ice Cream Sandwiches are adapted from a very special post I did about my own children many many many moons ago.

These cookies, which serve as our vessel, are. the. bomb! I’ve flavored them with not only silky mini chunks of dark chocolate, but I’ve added little bits of chopped dried strawberries which absolutely drive that strawberry flavor home!

And, because it’s a baby shower, I used a mini ice cream scoop to size the cookies – making this sweet treat —> tiny as a baby’s toes and ideal for nibbling down in a bite or two.

I picked up my favorite store-bought strawberry ice cream, though you could easily whip up my Strawberry Cheesecake No-Churn Ice Cream as an extra special treat!

Chocolate Chunk Strawberry Ice Cream Sandwiches

Description
These Chocolate Chunk Strawberry Ice Cream Sandwiches are easy to make, scrumptious to eat, and perfect for sweet celebrations!
Ingredients
- 14 tbsp. unsalted butter, softened
- 2 cups granulated sugar
- ½ cup packed light brown sugar
- 3 eggs
- 1 ½ cups creamy peanut butter
- ¾ tsp. vanilla extract
- 2 ¼ cups all-purpose flour
- ¾ tsp. baking soda
- ¼ tsp. salt
- 1 cup coarsely chopped bittersweet or semisweet chocolate
- 1 cup chopped dried strawberries
- 1 gallon strawberry ice cream (store bought or homemade)
Instructions
- Preheat oven to 350 degrees. Line two cookie sheets with parchment paper.
- Using an electric mixer, beat butter, sugar and brown sugar until light.
- Beat in eggs one at a time.
- Mix in peanut butter and vanilla.
- Stir in flour, baking soda and salt until just combined.
- Add the chocolate and dried strawberries and stir until mixed.
- Using a small ice cream scoop, drop dough 3 inches apart onto sheets.
- Bake on middle oven rack for approximately 15 minutes, until golden brown.
- Transfer cookies to wire racks and cool.
- Using the same small ice cream scoop, add ice cream to the center of two cookies, making a sandwich.
- Enjoy!
