There was a sale on cherry tomatoes. Two pints for a fair price. I picked them up with the intent to create not one but two awesome dishes. And now, as they say, the rest is history.
Don’t you just love a good wedge salad? A large wedge of cold iceberg lettuce, sharp homemade creamy blue, sweet cherry tomatoes and maple bacon?
Yep, you read that right…MAPLE BACON.
Sweet molasses maple-y flavored crispy strips enveloped in a cool salty slightly sharp blanket of creamy blue cheese dressing… mmmm – the stuff my dreams are made of.
And then, I went ahead and did something that takes our dreams and our dressing to a whole new level…
GREEK YOGURT.
By adding Greek yogurt rather than mayonnaise or sour cream, we’re adding essential nutrients that will help build muscle, keep our skin healthy and fight off illness.
Jackpot!

Description
This Crispy Wedge Salad with Greek Yogurt Creamy Blue & Maple Bacon is crunchy yet creamy, sweet yet spicy…I promise, your tastebuds will thank you for days!
Ingredients
- 1/2 cup Greek yogurt
- 1/2 cup crumbly blue cheese
- 1 Tbsp. fresh lemon juice
- 1 clove garlic, chopped
- 1/2 tsp. kosher salt
- 1/4 tsp. cracked black pepper
- 1 head iceberg lettuce, cut into quarters
- 1 pint cherry tomatoes, sliced
- 1/2 lb. maple flavored bacon, crumbled
- Salt and cracked black pepper, to taste
Instructions
- In a medium sized bowl, combine first six ingredients, whisking well. Set aside.
- Place one wedge of iceberg on its side on each plate.
- Spoon dressing on the wedge.
- Sprinkle with tomatoes and bacon.
- Add salt and pepper to taste.
- Serve.

Annie I will tell you that until now I have never eaten wedge salad! I know how sad does it sound!. This is probably the best wedge salad I have seen and all that crispy bacon on top makes me want to run to the grocery store right now and make this for lunch!

Have you seen the episode of Modern Family where Claire yells at Phil because he tried a wedge salad and raved about it after years of her trying to get him to taste it. Haha. This looks so good. I don’t eat pork bacon, but would love to substitute in some turkey bacon. 😀

Well, a wedge salad is definitely a new one for me, but it looks fabulous, especially with the maple and bacon.
Oh, and I think Greek yoghurt goes well with pretty much anything – I get through buckets of the stuff! 🙂
