Well, things are about to get interesting! This dish is warm and rustic…nothing fancy – just good old-fashioned potatoes dressed up in herbs, olive oil, and ……… cheese.

Do you see the crispy chips of Parmigiano-Reggiano in there? Yep – crispy Parmigiano chips clinging to rosemary scented caramelized potatoes as if their life depended on it. The texture is pure magic. And the aroma – fuggedaboudit!

Crispy Mini Potatoes with Parmigiano-Reggiano & Rosemary

Description

Crispy Mini Potatoes with Parmigiano-Reggiano & Rosemary are fantastically crispy and so irresistible – I dare you not to make them every week!


Ingredients

Scale
  • 2 pounds mini potatoes, unpeeled and halved (I used assorted red and white potatoes)
  • 1/3 cup olive oil
  • 3 tsp. chopped fresh rosemary
  • 1 cup freshly grated Parmigiano-Reggiano
  • Cracked black pepper

Instructions

  1. Preheat oven to 425 F.
  2. Place potatoes on a rimmed baking sheet.
  3. Drizzle with olive oil and sprinkle with rosemary. Toss well.
  4. Roast potatoes for 30 minutes.
  5. Remove from oven and using a spatula, toss the potatoes.
  6. Sprinkle with Parmigiano-Reggiano and toss to coat.
  7. Return the pan to the oven and roast for another 15 minutes, tossing again halfway through.
  8. Serve warm with a good crank of black pepper.
  9. Enjoy!

    Roasted potatoes are my favorite side dish, ever! I could eat them every day. These crispy mini potatoes with Parmigiano and Rosemary (two amazing ingredients!) are simply fantastic! I couldn’t stop from eating 😉 !

    Oh, these are adorable! Just looking at the parmesan crust is enough to make me shy away for your dare:) I am thinking every other day, not every week! Also a perfect snack to have in front of you with all the light spring beers coming up.. Cannot wait for Maibocks to get released this month – their hoppy herbal notes and the rosemary in these potatoes will add up to a gorgeous bouquet of aromas! Pinned!

    I let out an audible gasp at those crispy chunks of Parm. I ‘d need to make at least a triple batch of these babies because the first two would be all for me. Nothing beats a roasted potato, unless it’s one with cheese!
