Great poolside food, these Crispy Corn Fritters with Cayenne Maple Butter are crunchy on the outside, tasty on the inside, and absolutely addicting! I dare you to stop at just one!

If there is a fritter on the menu, there’s sure to be a fritter on my plate.
Case in point – we had a splendid meal recently at our new favorite haunt in Placid. And although my intent was to enjoy only an entree, once I saw corn fritters on the menu – I was done.
These fritters possessed everything you want in a good fritter:
- crispy on the outside
- soft and tasty on the inside
- savory
- pleasing
Corn fritters – deep fried in all their golden-batter-glory are the pièce de résistance of summertime appetizers!
I went a little heavy on the corn, as you can see from the photos – because – bring me all the fresh summer corn! And they make for a great textural experience, especially when dripping in melty cayenne maple butter. Oh yeah – you know what I’m talking about! Sweet-spice is where it is at! This butter is so good, my family was coming up with a list of ways we could use it beyond the corn fritter – it’s that delectable!

Crispy Corn Fritters with Cayenne Maple Butter

Description
Great poolside food, these Crispy Corn Fritters with Cayenne Maple Butter are crunchy on the outside, tasty on the inside, and absolutely addicting!
Ingredients
- 3 cups sweet corn kernels
- 3 eggs, beaten
- 3/4 cup flour
- ½ cup seasoned breadcrumbs
- 1/4 tsp. ground cayenne
- ½ tsp. kosher salt
- Olive Oil for frying, about 1/2 cup
- 4 Tbsp. softened butter
- 1/4 tsp. cayenne
- 3 Tbsp maple syrup
- Salt, to taste
Instructions
- In a large bowl combine sweet corn, eggs, flour, bread crumbs, cayenne and salt.
- Mix well.
- Let mixture rest for about 10 minutes.
- In the meantime prepare the flavored butter. Combine the butter, cayenne and maple syrup, stirring completely. Set aside.
- In a medium skillet, heat olive oil over medium heat.
- Scoop enough corn mixture to fit in the palm of your hand, about ⅛ cup. Or use a small ice cream scoop.
- Gently deliver scoop of corn mixture to the pan.
- Flatten and form into a small pancake shape. Cook 7 – 8 at a time.
- Sauté for about 4 minutes until cooked through and golden brown, turning once.
- Remove to a paper towel lined plate.
- Keep warm in a low oven.
- When all the batter is cooked, place fritters on a serving platter, salt to taste, and serve with Cayenne Maple Butter.
