Description
Great poolside food, these Crispy Corn Fritters with Cayenne Maple Butter are crunchy on the outside, tasty on the inside, and absolutely addicting!

- 3 cups sweet corn kernels
- 3 eggs, beaten
- 3/4 cup flour
- ½ cup seasoned breadcrumbs
- 1/4 tsp. ground cayenne
- ½ tsp. kosher salt
- Olive Oil for frying, about 1/2 cup
- 4 Tbsp. softened butter
- 1/4 tsp. cayenne
- 3 Tbsp maple syrup
- Salt, to taste
Instructions
- In a large bowl combine sweet corn, eggs, flour, bread crumbs, cayenne and salt.
- Mix well.
- Let mixture rest for about 10 minutes.
- In the meantime prepare the flavored butter. Combine the butter, cayenne and maple syrup, stirring completely. Set aside.
- In a medium skillet, heat olive oil over medium heat.
- Scoop enough corn mixture to fit in the palm of your hand, about ⅛ cup. Or use a small ice cream scoop.
- Gently deliver scoop of corn mixture to the pan.
- Flatten and form into a small pancake shape. Cook 7 – 8 at a time.
- Sauté for about 4 minutes until cooked through and golden brown, turning once.
- Remove to a paper towel lined plate.
- Keep warm in a low oven.
- When all the batter is cooked, place fritters on a serving platter, salt to taste, and serve with Cayenne Maple Butter.
