Which came in quite handy when I decided I was doing a recipe for Sweet Potato Fries with Sriracha Curry Mayo.

It all began last week when I discovered that today, July 13th, is National French Fries Day. I don’t know what it is about me and the national food holidays lately but they’re hitting me just right. When I saw that fries were going to have their day in the sun – I knew I was in.

So I floated a question to my kids… I told them I’d be making sweet potato fries, but needed help with the dipping sauce.

I was thinking of going in one of two directions. A curry based mayo sauce, or a Sriracha brown sugar ketchup type…

I got two votes for curry and one for brown sugar…

What to do? What to do? Compromise. Yes!

So I messed around with curry and Sriracha, and, wow, am I glad I did!

First of all – curry. Curry. Enough said. Am I right?

I love it from the moment I open the jar. No, before that. From the moment I think about it, I must have it. But to couple it with mayo… ahhh, now we’ve got ourselves a ravishing combination which always takes my mind straight to one of my favorite dishes: chicken divan…

The combination of curry and mayo is quite special on its own, but add Sriracha, a splash of lemon juice and a pinch of salt, well, let’s just say, by the time we were done taste-testing our sauce, the fries were cold.

Speaking of taste-testing, enter – The Guys. They saddled up to the island as I was playing with measures and it didn’t take them long to offer their two cents – which was quite a steal considering the outcome.

This is pub food at its finest. Sweet and slightly crispy fries dappled in a savory and spicy sauce that nudges one toward a sip of something that’ll cool the mouth ever so slightly. Bold flavors, bright colors, perfect textures, savory aromas.

I just realized something – it’s french fry day, and all I’ve really talked about is the sauce. ha.

To get the biggest bang for our buck, I recommend using two sheet pans. I sliced up six potatoes and spread them over two pans so not to crowd them. I also kept their skin, which contributes toward the crisp factor, then baked them on super high heat. I won’t tell you they have the same crunch that a deep-fried fry does, however, they’re pretty darn close considering they’re oven roasted.

Ingredients

Scale
  • 6 large sweet potatoes, cleaned and sliced
  • 2 Tbsp. olive oil
  • Kosher salt and cracked black pepper to taste
  • 1/2 cup mayonnaise
  • 1/8 cup Sriracha
  • 2 tsp. curry
  • 1 tsp. freshly squeezed lemon juice
  • 1/2 tsp. salt

Instructions

  1. Preheat the oven to 450 F.
  2. In a large bowl, toss the potatoes with olive oil, salt and pepper.
  3. Arrange on two sheet pans and bake for 30 minutes, shaking pans halfway through and switching oven racks.
  4. When fries begin to brown, remove from oven and let sit for a few minutes to cool slightly.
  5. In a medium sized mixing bowl, combine the remaining ingredients and stir.
  6. Transfer to a serving bowl.
  7. Serve fries with sauce.

    I love asking friends or family what they think will be good with a particular recipe! Sometimes the most surprising things come out of it! I am a french fry nut… especially sweet potatoes and a new, mouthwatering dipping sauce is always on my radar! This is what makes them extra special, right? Love that these are baked, with the sweetness of the potato balanced with the spice of the sriracha curry mayo- party in the mouth! With a cold one – yessss please! Thank you for this, Annie!

    Oh. My. Goodness. These fries! I don’t think I’ve ever tried tomake sweet potato fries at home. That’s changing ASAP! Curry Sriracha mayo is brilliant. I love that this was a family affair too. Your photos are drop dead gorgeous! I really feel like I’m in a pub looking at these amazing fries!

    Curry and sweet potatoes is one of my favorite combos ever!! Your kids sure to have great taste! I had no idea that today was national French fry day! I already ate dinner, so maybe I need to have some French fries for dessert 🙂 I’m so trying this curry sriracha dip soon!

    I’m voting for the brown sugar sause. Does that count? I guess I’m a bit too late, right?:) But if seriously, I do love roasted sweet potatoes, and I would easily eat a large plate even without the sauce. Sure, the sauce is the perfect addition! Nicely done, Annie!

    How could I have not known it was national french fry day – I love french fries! Love your version – sweet potato fries are the best – you feel like you’re eating a bit healthier.     Gahhh- Annie!!! I am DROOOOOOOLING!!!!! I am going to start where you started, with that sauce! Oh my good lord all mighty- I NEED that sauce!! Curry AND sriracha mayo?? Why in the world did I not think of that combination?! Holy cow, I have a feeling I am going to be slathering that stuff on everything! Starting with these bad boys! I love sweet potato fries and thesee look absolutely perfect! Baked with the skin on- YES! This makes me so bummed that my kitchen is in boxes and I can’t have this right now. I’m going to have to stick to torturing myself with your fantastic pictures. For now at least. I’m SO making this the second I unpack my kitchen. These Fries, this sauce and a cold beer will make the rest of unpacking a breeze! ♡ Cheers my dear!

    I adore sweet potatoes, grilled, fries, baked, however and they are so good with spicy seasonings! I am wondering if the sauce would be good on meat sandwiches for my boys? I’ll have to whip up a batch and see what they think.

      I tell you what…it is awesome as a spread. We actually put it on our burgers last night and it was amazing! The only thing I would caution is the heat from the Sriracha. You might want to test as you go…Thanks so much, Vanessa!
