Hi, friends! It feels great to be back!

I took a short hiatus to work behind the scenes and give CCB some much deserved attention. I have lots to share, but before anything, I want to express my immense gratitude to Becky Bayne of Becky’s Graphic Design and Andrea Farr of Nashville Geek for their creative design skills and consummate professionalism. The journey of bringing my vision to fruition has been an exciting one due to the support of these wonderful ladies and their companies!

Along with sharing my recipe for this awesome St. Patty’s Day dish, I thought I’d give you a little tour of our new digs.

You will soon discover that things are much easier to navigate. For example, our new Recipe Index includes CCB’s recipes in one convenient place. Starting with the most current post and going back seven years to my premier post for Orangecello, you’re sure to find something that’ll hit the spot!

We’ve added a link in the navigation bar to my Soul Snacks series which will play a bigger role around here. (News to follow!)

Colcannon {Irish Mashed Potatoes}

Now about this Colcannon…

I’ve been in love with this dish for more than a decade. It all began with a Food Network show that Tyler Florence had back in the day. He visited a farmstead in Ireland, and the woman he interviewed prepared colcannon for the show. It was a stunner of a dish, and certainly something in my wheelhouse.

There’s a good chance you have everything you need for this special St. Patrick’s Day dish:

  • russet potatoes
  • bacon (optional)
  • unsalted butter
  • green cabbage (or kale)
  • whole milk
  • scallions
  • chives (optional)
  • kosher salt
  • ground black pepper

Colcannon {Irish Mashed Potatoes}

COOK’S NOTES:

  • In this recipe I’m using green cabbage, though you could swap it with kale.
  • I’ve added crispy bacon, because, well, bacon. But you could leave that out altogether.
  • I’ve included green onions and chives, because I can never have enough!
  • And, there’s butter. Yes, butter.

If you have a craving for rustic Irish potatoes, and you’re looking for ‘easy’, this is a classic you can make yourself!

Description

A St. Patrick’s Day favorite, Colcannon is a traditional Irish mashed potato dish that is sure to become a treasured recipe!


Ingredients

Scale

4 lbs. russet potatoes, peeled and quartered

1/2 lb. bacon (optional)

12 Tbsp. unsalted butter, plus more for serving

About 1/2 head or 6 cups lightly packed thinly shredded green cabbage (or chopped kale)

2 cups whole milk

8 scallions, finely chopped

finely chopped chives for garnish (optional)

Kosher salt & freshly ground black pepper


Instructions

Bring potatoes to a boil and cook until tender, 20 – 25 minutes.

In the meantime, cook bacon until crisp. When done, remove to a paper-towel lined dish. Once cooled enough, break bacon into bite-sized pieces.

Once potatoes are fork tender, drain and set aside.

Return the pot that the potatoes cooked in to the stovetop. Add 12 Tbsp. of butter and melt over medium heat.

Once butter is melted, add cabbage, and cook until wilted, about 8 minutes.

To the same pan, add milk and scallions. Bring to a boil.

Add potatoes and bacon.

Using a potato masher, mash and stir until all ingredients are evenly incorporated.

Season with salt, pepper and chives.

Serve hot with large pats of butter.
