Colcannon {Irish Mashed Potatoes}

Description

A St. Patrick’s Day favorite, Colcannon is a traditional Irish mashed potato dish that is sure to become a treasured recipe!


Ingredients

Scale

4 lbs. russet potatoes, peeled and quartered

1/2 lb. bacon (optional)

12 Tbsp. unsalted butter, plus more for serving

About 1/2 head or 6 cups lightly packed thinly shredded green cabbage (or chopped kale)

2 cups whole milk

8 scallions, finely chopped

finely chopped chives for garnish (optional)

Kosher salt & freshly ground black pepper


Instructions

Bring potatoes to a boil and cook until tender, 20 – 25 minutes.

In the meantime, cook bacon until crisp. When done, remove to a paper-towel lined dish. Once cooled enough, break bacon into bite-sized pieces.

Once potatoes are fork tender, drain and set aside.

Return the pot that the potatoes cooked in to the stovetop. Add 12 Tbsp. of butter and melt over medium heat.

Once butter is melted, add cabbage, and cook until wilted, about 8 minutes.

To the same pan, add milk and scallions. Bring to a boil.

Add potatoes and bacon.

Using a potato masher, mash and stir until all ingredients are evenly incorporated.

Season with salt, pepper and chives.

Serve hot with large pats of butter.
