Yesterday was one of those days…I needed to seek comfort…Maybe it was due to my missing the kids a whole lot… or because of the heavy gray skies… or simply a result of my residual crankiness due to jet lag… or maybe it was all three, but whatever the culprit, I knew planning for dinner and blogging about it would help feed my need for tranquility, so off to Tops Friendly Market I went. With the mood I was in, I could have easily cleared the shelves of all the Thomas’, but I did not. I only bought one package – okay two – but the second one was free with the purchase of the first. And finding a good deal brings me comfort.
From there I looped back to the produce section to pick up some russets…I decided this meal was going to be all about creating an experience so satisfying that we couldn’t help but fall to sleep on a pillow fluffy with peace and contentedness, and I’m pretty sure it doesn’t get much more comforting than chicken and gravy over mashed potatoes.
So then I got to thinking…what else in my life brings me comfort?
I find comfort in my favorite songs, my first cup of coffee in the morning, my kids’ voices, Dom’s bear hugs, my books, Champy’s face peeking around the corner, the presence of those I love, the smell of fresh cut grass, cooking, Lake Placid, my oldest denim shirt, time spent with friends, and my camera…
Truth is, comfort is built in all around us, and I find that when I give the little things credit for the grand job they do, the sky doesn’t seem so gray and the kids don’t feel so far away.
So this chicken recipe – believe me when I tell you – cannot get any simpler. (Simplicity – just one more spoke on my wheel of comfort.) Probably the hardest part was cleaning the chicken before dumping it into the crockpot. Okay, maybe the mashed potatoes required a tiny bit of exertion, but other than that – once the chicken was cooked – the meal came together in just minutes.
It’s wonderful when a plan comes together.
My process for shopping, cooking, and photographing brought me the comfort I was looking for.
Because I built my actions around the way I wanted to feel…I felt better…

Ingredients
- 2 lbs. skinless chicken breast
- 2 cups (16 oz.) chicken broth
- 2 packets chicken gravy mix
Instructions
- Place chicken breasts in the crockpot. Pour in the chicken broth, cover and cook on high for about 3 – 4 hours or until chicken easily pulls apart.
- Pour 2 cups of the chicken broth out of the crockpot and into a saucepan.
- Discard any remaining liquid.
- Add the two gravy packets into the saucepan and whisk well.
- Simmer on low until gravy thickens.
- While the gravy simmers, remove the chicken breasts from the crockpot and shred into large pieces.
- Serve the chicken and gravy over mashed potatoes.

This is my first time trying this yummy looking recipe! However, I am using frozen chicken breast. If I use my crock pot and cook on high for 3 hours then lower to slow for about 3 hours do you think that would be adequate time for the frozen chicken to have thoroughly cooked and still be fall apart tender?

Yep, these is another recipe that calls for the gravy mix, cream of chicken soup, I use cream of chicken with herbs, plus add water and the chicken gravy mix 1 3/4 cup of water.. This one just sounds like it would add more flavor while cooking..very yummy I’ll try this one too but will prob add the mix..

Hello 😀 I only make really small amounts of food in my crockpot so would the measurements for the broth and everything be the same if I just want to make two chicken breasts?

U could cut the recipe in half I always do that because there is only two of us. I’m doing it with all the ingredients just to c how it comes out to not waste the soup. And I used turkey mix instead of chicken hoping it is ok…just will leave u with lots of gravy which my hubby loves

The first time I tried this it was a bit bland for our tastes. So since then I have used a simple seasoning called chicken seasoning and it makes it SSOOO awesome! This has become a repeat dinner in our house it’s just great!

Made this tonight. Very yummy, very easy and very comforting and hubby also said “very filling”. Unfortunately the wee ones wouldn’t eat it but they don’t count because they essentially eat nothing I cook except pasta. I basically weighed out two pounds of chicken breasts, added two cans of chicken broth (i.e. 2 of the small cans 14.5 oz) as I knew we’d want more gravy than 2 cups. I got 4 cups of gravy out of it. Just some notes from me: I made mashed potatoes as I usually do but probably should have not added any milk because the gravy adds the liquid when you serve it. I added maybe three tablespoons of white wine and some crushed thyme to the gravy after I knew the kids wouldn’t eat it and it did taste even yummier to me. I’m sure it would taste just as great with rice or noodles but since mashed potatoes are like the ultimate comfort food for me…has to be mashed potatoes! Thank you for posting this recipe. It will be one I know I will “crave” on those days I just need that comfort food. I’m already craving the leftovers. I can’t believe how something so simple,can be so good.

I only used 1 lb. of chicken per the 2 packs of gravy to give it more gravy and it turned out wonderful! Will definitely be making it again!

It being a chilly October day, I’m excited to try this since I have to skip my churches annual hayride due to my little one being sick with a cold from this weather.
