Yesterday was one of those days…I needed to seek comfort…Maybe it was due to my missing the kids a whole lot… or because of the heavy gray skies… or simply a result of my residual crankiness due to jet lag… or maybe it was all three, but whatever the culprit, I knew planning for dinner and blogging about it would help feed my need for tranquility, so off to Tops Friendly Market I went. With the mood I was in, I could have easily cleared the shelves of all the Thomas’, but I did not. I only bought one package – okay two – but the second one was free with the purchase of the first. And finding a good deal brings me comfort.
From there I looped back to the produce section to pick up some russets…I decided this meal was going to be all about creating an experience so satisfying that we couldn’t help but fall to sleep on a pillow fluffy with peace and contentedness, and I’m pretty sure it doesn’t get much more comforting than chicken and gravy over mashed potatoes.
So then I got to thinking…what else in my life brings me comfort?
I find comfort in my favorite songs, my first cup of coffee in the morning, my kids’ voices, Dom’s bear hugs, my books, Champy’s face peeking around the corner, the presence of those I love, the smell of fresh cut grass, cooking, Lake Placid, my oldest denim shirt, time spent with friends, and my camera…
Truth is, comfort is built in all around us, and I find that when I give the little things credit for the grand job they do, the sky doesn’t seem so gray and the kids don’t feel so far away.
So this chicken recipe – believe me when I tell you – cannot get any simpler. (Simplicity – just one more spoke on my wheel of comfort.) Probably the hardest part was cleaning the chicken before dumping it into the crockpot. Okay, maybe the mashed potatoes required a tiny bit of exertion, but other than that – once the chicken was cooked – the meal came together in just minutes.
It’s wonderful when a plan comes together.
My process for shopping, cooking, and photographing brought me the comfort I was looking for.
Because I built my actions around the way I wanted to feel…I felt better…

Ingredients
- 2 lbs. skinless chicken breast
- 2 cups (16 oz.) chicken broth
- 2 packets chicken gravy mix
Instructions
- Place chicken breasts in the crockpot. Pour in the chicken broth, cover and cook on high for about 3 – 4 hours or until chicken easily pulls apart.
- Pour 2 cups of the chicken broth out of the crockpot and into a saucepan.
- Discard any remaining liquid.
- Add the two gravy packets into the saucepan and whisk well.
- Simmer on low until gravy thickens.
- While the gravy simmers, remove the chicken breasts from the crockpot and shred into large pieces.
- Serve the chicken and gravy over mashed potatoes.

Hi Liz, Thanks for stopping by! It’s safe to cook 1/2 lb. of chicken per person, so for 6 people I would use 3 lbs. of chicken, 3 cups of broth and 2 1/2 – 3 packets of gravy. So glad you liked it! Hmmm – that’s a good question. I suppose you could switch out the slow-cooker for a dutch oven and cook on the stove top but you’d have to change the time allotted for cooking. I’ve not made it this way, so I can’t say for certain how it would fair. If you experiment, I’d love to know how it goes. Thanks, Elizabeth.

Yes you can boil chicken on the stove until it falls apart, take a can of cream of chicken soup add to 1 1/2 cup of broth still same recipe just quicker. Cook this MANY TIME. You can even add some broccoli to change it up.

That’s a valid question but you will be surprised at how easily the chicken falls apart after it’s cooked. It is that tender. It’s really not worth messing around with cubing the chicken in its raw state. Enjoy!

Hi Lexi, With chicken you’ll want to go 7 or more hours. However, this is a general approximation. I would recommend you check the owner’s manual just to be sure of the appropriate cooking time for chicken when cooked on LOW. Thanks for your question.

No, I did not use frozen chicken. That’s actually unsafe. The only time chicken can go straight from the freezer to cooking is when you’re deep frying because it will cook quickly enough from the frozen state to pass through the temperature danger zone without harm. You’ll want to use chicken that’s already been thawed.

Hi. I’m curious about this, could you tell me more? I’ve been cooking frozen chicken for 10 years with no problem. I put it in a pan, add water, cover, and cook on med to high heat adding water as needed. I cook it for several hours. My mom does the same, always has. I’m just wondering how unsafe it is? Thanks.

The most pressing concern with cooking chicken, whether from a frozen or unfrozen state, is that it’s cooked all the way through before eating. The internal temperature needs to be 165 degrees F. The only other thing worth mentioning is that to cook frozen chicken to a healthy temperature will take more time, approximately 50% longer. So – you and your mom are good to go!

Hi Annie. I was so excited to try this. I really love chicken with gravy. But….the gravy never got thick. It was so watery. Other than that, it tasted good. Any ideas on how to get that gravy alittle thicker? Thank you

Oh no, I’m sorry! Hmmmm – perhaps a dash of cornstarch or flour mixed with a little water then added to the gravy will do the trick. I’ll keep my fingers crossed that next time works for you.
