Yesterday was one of those days…I needed to seek comfort…Maybe it was due to my missing the kids a whole lot… or because of the heavy gray skies… or simply a result of my residual crankiness due to jet lag… or maybe it was all three, but whatever the culprit, I knew planning for dinner and blogging about it would help feed my need for tranquility, so off to Tops Friendly Market I went. With the mood I was in, I could have easily cleared the shelves of all the Thomas’, but I did not. I only bought one package – okay two – but the second one was free with the purchase of the first. And finding a good deal brings me comfort.

From there I looped back to the produce section to pick up some russets…I decided this meal was going to be all about creating an experience so satisfying that we couldn’t help but fall to sleep on a pillow fluffy with peace and contentedness, and I’m pretty sure it doesn’t get much more comforting than chicken and gravy over mashed potatoes.

So then I got to thinking…what else in my life brings me comfort?

I find comfort in my favorite songs, my first cup of coffee in the morning, my kids’ voices, Dom’s bear hugs, my books, Champy’s face peeking around the corner, the presence of those I love, the smell of fresh cut grass, cooking, Lake Placid, my oldest denim shirt, time spent with friends, and my camera…

Truth is, comfort is built in all around us, and I find that when I give the little things credit for the grand job they do, the sky doesn’t seem so gray and the kids don’t feel so far away.

So this chicken recipe – believe me when I tell you – cannot get any simpler. (Simplicity – just one more spoke on my wheel of comfort.) Probably the hardest part was cleaning the chicken before dumping it into the crockpot. Okay, maybe the mashed potatoes required a tiny bit of exertion, but other than that – once the chicken was cooked – the meal came together in just minutes.

Chicken & Gravy

Ingredients

Scale
  • 2 lbs. skinless chicken breast
  • 2 cups (16 oz.) chicken broth
  • 2 packets chicken gravy mix

Instructions

  1. Place chicken breasts in the crockpot. Pour in the chicken broth, cover and cook on high for about 3 – 4 hours or until chicken easily pulls apart.
  2. Pour 2 cups of the chicken broth out of the crockpot and into a saucepan.
  3. Discard any remaining liquid.
  4. Add the two gravy packets into the saucepan and whisk well.
  5. Simmer on low until gravy thickens.
  6. While the gravy simmers, remove the chicken breasts from the crockpot and shred into large pieces.
  7. Serve the chicken and gravy over mashed potatoes.

    What do you think about serving over mashed sweet potatoes? My family does not eat potatoes…but this recipe looks wonderful and I would love to try it.

    This is my first time trying this yummy looking recipe! However, I am using frozen chicken breast. If I use my crock pot and cook on high for 3 hours then lower to slow for about 3 hours do you think that would be adequate time for the frozen chicken to have thoroughly cooked and still be fall apart tender?

      I add a bit of dry gravy mix to mine for flaver. It’s just adds to the deliciousness!

      Yep, these is another recipe that calls for the gravy mix, cream of chicken soup, I use cream of chicken with herbs, plus add water and the chicken gravy mix 1 3/4 cup of water.. This one just sounds like it would add more flavor while cooking..very yummy I’ll try this one too but will prob add the mix..

      I have added during the cooking process and used white wine instead of chicken broth. It turned out very good. Also served over noodles and rice.

    Hello 😀 I only make really small amounts of food in my crockpot so would the measurements for the broth and everything be the same if I just want to make two chicken breasts?

      U could cut the recipe in half I always do that because there is only two of us. I’m doing it with all the ingredients just to c how it comes out to not waste the soup. And I used turkey mix instead of chicken hoping it is ok…just will leave u with lots of gravy which my hubby loves

    Looks de-lish, it’s in the crock-pot as we speak! I have egg noodles I am going to prepare instead of mashed potatoes, just because I had them on hand. Do you think that will work? Thank you for such an easy recipe.

      I make turkey and noodles quite often, most especially around the christmas holidays! but the noodles I think would be a great substitute!

    I made this on Sunday and it was so darn good!!! So easy too! This recipe turned out perfect for the 2 of us with just a little for leftovers. Served it over mashed potatoes with a veggie and we both loved it! Thank you so much for sharing this easy and very yummy recipe!

      The first time I tried this it was a bit bland for our tastes. So since then I have used a simple seasoning called chicken seasoning and it makes it SSOOO awesome! This has become a repeat dinner in our house it’s just great!

    I am SO excited to make this – I’m here at work thinking about what to make for supper – I cook for my husband and 25 year old granddaughter and send a lunch for my son as well so I will have to double this recipe for sure – but looking at your great pictures you took makes me in the mood for this – so thanks for posting this recipe and taking those pictures – it just looks like you want to pick up the fork and dig in! And I always put pepper on these kind of things and your picture shows it with pepper – I really just want to dig in! Thanks and have a great day.

    Made this tonight. Very yummy, very easy and very comforting and hubby also said “very filling”. Unfortunately the wee ones wouldn’t eat it but they don’t count because they essentially eat nothing I cook except pasta. I basically weighed out two pounds of chicken breasts, added two cans of chicken broth (i.e. 2 of the small cans 14.5 oz) as I knew we’d want more gravy than 2 cups. I got 4 cups of gravy out of it. Just some notes from me: I made mashed potatoes as I usually do but probably should have not added any milk because the gravy adds the liquid when you serve it. I added maybe three tablespoons of white wine and some crushed thyme to the gravy after I knew the kids wouldn’t eat it and it did taste even yummier to me. I’m sure it would taste just as great with rice or noodles but since mashed potatoes are like the ultimate comfort food for me…has to be mashed potatoes! Thank you for posting this recipe. It will be one I know I will “crave” on those days I just need that comfort food. I’m already craving the leftovers. I can’t believe how something so simple,can be so good.

    This was absolutely DELICIOUS!!! My oh so picky 5 year old even asked for seconds!
    I only used 1 lb. of chicken per the 2 packs of gravy to give it more gravy and it turned out wonderful! Will definitely be making it again!

    So I found this post via Pinterest. It being a chilly October day, I’m excited to try this since I have to skip my churches annual hayride due to my little one being sick with a cold from this weather. If i can’t go to my church hayride filled with a bonfire and loads of different soups, I’m going to make this and feel just as comfy/fall-ish (Is that a word? Well it is now!!) at home! Excited to see how it turns out at my house. 🙂

    Just wanted you to know that your recipe and words are timeless – it’s Sept 2015 now and I’m fixing to leave for Saturday shopping. I’m catching a good sale on whole chicken and will freeze packets of this recipe to have to quick comfort meals during our winter months.
