Goodness, when was the last time CCB shared a pancake recipe? Too long! Way too long! Want to know when? Okay – I’ll tell you. January 21, 2014. You read that right, 2-0-1-4!!! Are you kidding me?!

I’m in shock! Especially since it’s a pretty popular food in these parts…these parts being our home.

Dom is a wizard when it comes to pancakes. When the kids were younger, pancakes were a staple on the weekends. So I guess we operate under a formula ——–> kids in the house = pancakes on Sunday.

Let’s say we change the formula…. pancakes aren’t just for breakfast anymore. And not just for Sundays, either.

The idea for these pancakes began during a recent trip to Lake Placid.

Last Sunday we took to the village. Cold and a little bit rainy with skies the color of slate, we popped into a few of our favorite shops. Luc made it pretty clear that she didn’t want to leave without a stop at Saratoga Olive Oil Company where tastings could ensue. That was an invitation we couldn’t resist! So in we went after checking out the 80% off sales at Bass.

Slews of flavored olive oils and vinegars, salts, and as of late – maple syrup. Gosh, we tasted everything from Cayenne to Blood Orange combined with Chocolate Balsamic Vinegar, Granita olive oil to Black Truffle.

We ended our experience with a (not so little) sip of Bourbon Barrel Aged Maple Syrup.

Oh my gahhhh. Tiny fireworks went off in my brain and I knew that once we were back home, the griddle would have its day in the sun.

I played a little with this recipe. Not only did I want the Bourbon Barrel Aged Maple Syrup on the pancakes, I wanted it in them, too. And what are pancakes without homemade whipped cream?

These pancakes take the cake. They’re thick and fluffy with just a hint of bourbon flavor.

Description

Sundays call for pancakes…Bourbon Barrel Aged Maple Syrup Pancakes with Whipped Cream and Blackberries to be exact!


Ingredients

Scale
  • 2 cups flour
  • 3 tsp. baking powder
  • 2 Tbsp. sugar
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
  • 2 eggs
  • 1 1/2 cups milk
  • 4 Tbsp. unsalted butter (plus more for frying)
  • 2 Tbsp. Bourbon Barrel Aged Maple Syrup (plus more for serving)
  • 2 cups fresh blackberries
  • Whipped Cream

Instructions

  1. In a large bowl whisk together the flour, baking powder, sugar, salt and cinnamon.
  2. In a separate small bowl, whisk together the eggs, milk, melted butter, vanilla and syrup.
  3. Pour the wet ingredients into the dry and stir until just combined. Don’t worry if there are lumps.
  4. Heat a frying pan (or griddle) over medium heat. When the pan is hot, melt about a tablespoon of butter.
  5. Using a small ladle, pour about 1/3 cup of pancake batter onto the pan.
  6. When the pancake starts to bubble and the bottom is golden, turn over. Cook the other side for about a minute, or until golden.
  7. Repeat with remaining batter, adding butter to the pan between batches.
  8. Serve immediately with butter, Bourbon Barrel Aged Maple Syrup, whipped cream and blackberries.

    2014?! That IS a looong time, Annie! Come to think of it, I have ZERO pancake recipes on my site!? Whaaaa?? That needs to change.     I’ve been to the Saratoga olive oil company in Saratoga Springs – love that store – great gifts for the holidays or anytime. And I love these pancakes, Annie – absolutely delicious and such pretty pictures – and sign me up for the bourbon syrup!

    Annie, I think those are the fluffiest pancakes I’ve ever seen in my life! I’ve got a ton of bourbon barrel aged beer in my life, but I really need some of this maple syrup STAT! I love those dang specialty olive oil stores too. I could spend all day and about a million bucks in there.

    I’ve not been to Saratoga Olive Oil Company but I have tried a similar place in Carmel by the Sea.And those balsamics! I swear you could drizzle them on ice cream as is. Of course I also would have left with some syrup too. Why not complete the experiece. Gorgeous flap jacks!

    I’ve been dying over your pancakes since I saw them on Instagram! Wow! I love that you added maple syrup to the batter itself. And, I love the sound of the store you visited. I’m not a shopper, but if I can taste gourmet food while looking around, I’m in!

    My Dad was always the pancake maker when I was growing up Annie! He would have LOVED these! That syrup and those blackberries and whipped cream. What a combination. Perfect for Meatless Monday or any other day!

    Why not breakfast for dinner?? I’ve had pizza for breakfast before and nibbled on leftover fried chicken. There are no steadfast rules so I agree that pancakes for dinner would be fantastic. How about a mimosa to go along with it? I haven’t made pancakes in ages, not since our kids moved. 🙁 I certainly miss it. Have a great day!

    Well this is torture. 😉 Now all I want is a huge stack of these fluffy pancakes, Annie!!! Pancakes are one of life’s great pleasures if you ask me, and these look just FABULOUS! I love that you used the bourbon maple syrup IN the pancakes!!!!! So much genius going on there! And I couldn’t agree more, pancakes should be consumed on a Monday, or Tuesday, Wednesday, Thursday, Friday, Saturday. Let’s just eat these pancakes daily… mmkay?! <3 Pinned! Cheers dear!
