Ingredients

Scale
  • 2 cups flour
  • 3 tsp. baking powder
  • 2 Tbsp. sugar
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
  • 2 eggs
  • 1 1/2 cups milk
  • 4 Tbsp. unsalted butter (plus more for frying)
  • 2 Tbsp. Bourbon Barrel Aged Maple Syrup (plus more for serving)
  • 2 cups fresh blackberries
  • Whipped Cream

Instructions

  1. In a large bowl whisk together the flour, baking powder, sugar, salt and cinnamon.
  2. In a separate small bowl, whisk together the eggs, milk, melted butter, vanilla and syrup.
  3. Pour the wet ingredients into the dry and stir until just combined. Don’t worry if there are lumps.
  4. Heat a frying pan (or griddle) over medium heat. When the pan is hot, melt about a tablespoon of butter.
  5. Using a small ladle, pour about 1/3 cup of pancake batter onto the pan.
  6. When the pancake starts to bubble and the bottom is golden, turn over. Cook the other side for about a minute, or until golden.
  7. Repeat with remaining batter, adding butter to the pan between batches.
  8. Serve immediately with butter, Bourbon Barrel Aged Maple Syrup, whipped cream and blackberries.
