Hi, friends! I feel like I’ve been gone forever!

The last two weeks have been a veritable whirlwind! We bounced from Boston to Lake Placid with a few other hops in between. Not only did we soak up record breaking sunshiny days, we reveled in highly anticipated family time too. Chelsea came home from California for a friend’s wedding and she was able to tack on a bunch more days with us. And now, as I sit here pondering the last couple of weeks, turning over in my mind the memories that will sustain me until we’re back together for the holidays, the first thought that comes to mind is the five of us decked out in our comfiest duds, strewn about our cozy pad, laughing hysterically at the stand-up shenanigans of one of our new favorite comedians. For over an hour the physical humor of Sebastian Maniscalco held our attention and inspired an unforgettable family experience.

What is it about laughter? You know – that kind of laughter – that deep-down, can’t catch your breath, tears pouring, stomach-aching kind of belly laugh that creates positive energy in the room. An energy you can almost touch. One that feels pretty darn close to a religious experience. Seriously. This was the kind of laughter that left us lighter and happier for having shared in an experience that united us around a singular cause. Humor.

So, after nine days of this… Nine days of allowing the natural rhythm of summer to dictate our risings and shinings: coffee in the morning, late lunches, slow dinners, it was time to button up the place and get home. It’s never easy. Never easy. But we are so lucky to have opportunities that bring us together for such special times.

I don’t know about you, but following a vacation, the first thing I crave is a homemade meal…a homemade meal that requires very little effort and very few ingredients.

I want my meal simple, tasty, and always the colors of the Italian flag. <——Kidding not kidding. 🙂

Description

Ziti with Fresh Mozzarella, Sun-Dried Tomatoes & Prosciutto can be ready in a flash and on your table in no time!


Ingredients

Scale
  • 3 Tbsp. olive oil, divided
  • 1 – 2 plump garlic cloves, minced
  • 7.5 oz. sun-dried tomatoes packed in olive oil, sliced (Retain the olive oil for later use in the recipe.)
  • 3 oz. sliced prosciutto, cut into thin slices
  • 1 lb. ziti
  • 1 cup reserved pasta water
  • 8 oz. fresh mozzarella, torn into pieces
  • Fresh basil for garnish
  • Freshly ground black pepper, to taste

Instructions

  1. In a large heavy skillet, heat 2 Tbsp. olive oil over medium heat. Add the garlic and sauté until fragrant, about 30 seconds.
  2. Add the chopped sun-dried tomatoes and prosciutto slices. Cook until prosciutto begins to crisp.
  3. In the meantime, cook ziti until al dente, about 7 minutes.
  4. When pasta is done, add to the skillet along with 1/2 – 1 cup reserved pasta water. Toss to coat.
  5. Remove skillet from heat and add the mozzarella, basil and black pepper.
  6. Finish with the oil from the sun-dried tomatoes and an extra drizzle of olive oil.
  7. Transfer to shallow bowls.
  8. Enjoy!

    Sounds like you’ve had a fun summer Annie! This dish would make getting back home after a vacation much more tolerable. We always crave a nice, delicious home cooked meal too! It’s nice to dine out, but home cooking is always best! Loving this hearty dish!
