Description
Ziti with Fresh Mozzarella, Sun-Dried Tomatoes & Prosciutto can be ready in a flash and on your table in no time!
Ingredients

- 3 Tbsp. olive oil, divided
- 1 – 2 plump garlic cloves, minced
- 7.5 oz. sun-dried tomatoes packed in olive oil, sliced (Retain the olive oil for later use in the recipe.)
- 3 oz. sliced prosciutto, cut into thin slices
- 1 lb. ziti
- 1 cup reserved pasta water
- 8 oz. fresh mozzarella, torn into pieces
- Fresh basil for garnish
- Freshly ground black pepper, to taste
Instructions
- In a large heavy skillet, heat 2 Tbsp. olive oil over medium heat. Add the garlic and sauté until fragrant, about 30 seconds.
- Add the chopped sun-dried tomatoes and prosciutto slices. Cook until prosciutto begins to crisp.
- In the meantime, cook ziti until al dente, about 7 minutes.
- When pasta is done, add to the skillet along with 1/2 – 1 cup reserved pasta water. Toss to coat.
- Remove skillet from heat and add the mozzarella, basil and black pepper.
- Finish with the oil from the sun-dried tomatoes and an extra drizzle of olive oil.
- Transfer to shallow bowls.
