I thought it might be fun to continue riding that ever-popular sweet potato train, steadily moving us along to its final destination – Thanksgiving!

Our Sweet Potato Casserole with Pecan Streusel, which I shared last week, is a classic; but every now and again I wonder what else can be added to silky sweet potatoes to produce an equally delicious Thanksgiving dish. You wonder, too?

I couldn’t think, couldn’t think, couldn’t think – so I turned to the experts.

Of course!!! The ladies (outside of my family) who were the first to teach me about entertaining!

Julee Rosso & Sheila Lukins. Are you familiar with The Silver Palate Cookbook? Yes? Then perhaps you’re aware of their second book? The Silver Palate Good Times Cookbook… (Don’t you just love that title?)

It’s from their second book that I learned this fresh idea.

Upon flipping through the section called ‘America Gives Thanks’ – Sweet Potato and Banana Puree stopped me dead in my tracks.

What?

Banana?

With sweet potato?

Of course!

Why not?

It’s sweet. It’s soft. It adds a new dimension without overpowering.

And when coupled with toasted almonds…we’re talking fine dining!

The potato puree is wonderful with its tiny speckles of banana, but I took those speckles one step further and caramelized a couple more bananas – adding them to the top of the casserole.

INGREDIENTS for WHIPPED SWEET POTATO WITH CARAMELIZED BANANA & TOASTED ALMONDS:

    • Sweet potatoes
    • Ripe bananas
    • Unsalted butter
    • Rum
    • Brown sugar
    • Nutmeg
    • Salt
    • Sliced almonds
    • Orange juice

Here’s the deal – you can stop at the layer of toasted almonds – which in itself is a fine fine addition…

But – if you’re looking to really change things up…………

Description

Whipped Sweet Potato with Caramelized Banana & Toasted Almonds is decadent and creamy and perfect for your Thanksgiving table!


Ingredients

Scale
  • 8 cups peeled, diced sweet potatoes
  • 5 ripe bananas, divided
  • 1 stick unsalted butter
  • 2 Tbsp. rum
  • 3 Tbsp. brown sugar, divided
  • 1/2 tsp. nutmeg
  • Salt, to taste
  • 1 cup toasted sliced almonds
  • 1/4 cup orange juice

Instructions

  1. Place sweet potatoes in a medium-size saucepan. Add water to cover.
  2. Cook until very tender; drain.
  3. In a large bowl, mash three of the bananas with a potato masher or a hand mixer.
  4. Add the hot sweet potatoes, 4 Tbsp. butter, rum and 2 Tbsp. brown sugar.
  5. Mix until smooth.
  6. Add the nutmeg and salt to taste; mix to blend. Place in a serving bowl and keep warm.
  7. Melt 2 Tbsp. butter in a small skillet. Add the almonds and sauté until lightly browned. Sprinkle with salt and set aside in a small bowl.
  8. In the same skillet, melt the remaining butter. Slice the remaining bananas into ½-inch slices and add to skillet. Cook both sides until they just begin to brown then add 1 Tbsp. brown sugar and orange juice.
  9. Sauté until the liquid thickens and the bananas are caramelized on both sides.
  10. Top the sweet potatoes with the banana slices and toasted almonds.
