And I was wishing in that moment I could say, “Oh, come on dearest…who doesn’t know what a smoothie bowl is?” acting cool and all-knowing, but the truth is, I just found out about smoothie bowls within the last week or so, myself. Look at me so on top of the trends. Psych.

This Tropical Smoothie Bowl with Chia Seeds filled us up(!) but was sooo yummy, it left us wanting more.

What I discovered and fell in love with is the fact that we can take our smoothie, which has long been a filling snack or a go-to refresher after a harsh work out, and make it a meal. A meal complete with utensils, napkins and the Sunday paper. Yes, I begin with the comics. It’s a strategic move.

Smoothie bowls…quick to make, refreshing, healthy, tasty, filling, and today, tropical.

Who couldn’t get behind this bowl of sunshine for breakfast?

And don’t even get me started on how adaptable it is. Like your favorite smoothie, whether it be green, filled with nut butters, coconut milk or yogurt…the base of this baby can be made with the smoothie ingredients of your dreams. And toppings? Forget about it! That’s where things can really get fun and filling. Berries, tropical fruits, seeds…you name it. It works.

The other nice thing? It’s not a meal on the go. Hear me out…

It requires you to sit, use a spoon and slow down…read the paper, chat with your breakfast buddy and plan your day.

Tropical Smoothie Bowl with Chia Seeds

Ingredients

Scale
  • 2/3 cup shredded coconut, toasted, divided
  • 1 1/2 cups fresh pineapple, cubed, divided
  • 1 cup fresh mango, cubed
  • 2/3 cup Greek yogurt
  • 1 cup lite coconut milk
  • 1 banana
  • 2 cups ice
  • For garnish: 1 – 2 Tbsp. chia seeds, 1/2 cup cubed pineapple, 1/3 cup toasted coconut

Instructions

  1. Place shredded coconut in a small non-stick pan over medium heat. Cook, stirring continuously until coconut has desired toasty color and crunch.
  2. Place 1/3 cup coconut, 1 cup cubed pineapple and remaining five ingredients in a food processor or blender.
  3. Blend until smooth.
  4. Divide smoothie in two bowls.
  5. Top with chia seeds, pineapple and remaining toasted coconut.

    These smoothie bowls are all the rage right now and I’m feeling a little left out, hehe. This tropical version is reminding me of Cancun on the beach and relaxing. 🙂 I need to try this asap! Looks delicious and gorgeous photos. Pinned!

    I’ve never heard of a smoothie bowl! This is wonderful -as you mentioned, I love that unlike a smoothie, it’s not grab and go. It forces you to sit down and relax. Great flavors too!

    I’m pretty new to smoothies bowls too and I absolutely love them! I would have never thought something so healthy could taste so decadent! Love your tropical rendition, it makes me think of the Caribbean seas and a warm breeze!

    Sunshine in a bowl is totally right! Not only are these smoothie bowls vibrantly beautiful, they look seriously scrumptious and THE perfect way to start your day! I applaud your desire to slow down and apprechiate life… but, I am sure I could find a way to eat these on the go 😉 lol. I’m going to have to make these, because they are far too fabulous to pass up!     I’ve not made a smoothie bowl, but want to, especially now! This sounds so delicious, and tempting. You’ve made a good point about it not being an on the go breakfast, that we’d need to sit with a spoon and enjoy it. And we’d all be healthier if we ate this way too. I’m afraid I’d get a blank glare from Rob if I put this in front of him and handed him a spoon. But with like everything else, I’ll do it, while I enjoy every last bite! Thank you for this Annie!
