I’m so excited to once again (…can’t believe it’s been a year already since making this) share with you this special opportunity to support children’s charities, including Feeding America, simply by shopping for healthy and nutritious fruits and vegetables. Many grocery retail participants, including Price Chopper, will host demonstrations highlighting delicious recipes, creative meal solutions and helpful tips for families looking to embrace healthier eating habits.

Beginning April 24th, Produce for Kids® kicked off its 13th annual campaign. This organization, committed to educating families on the benefits of healthy eating, has partnered with a large number of fresh produce suppliers who will make a consumption-based donation to children’s organizations – which means – the more items that shoppers purchase, the more local children’s organizations benefit. To help Price Chopper increase its donation, shoppers are encouraged to add more produce to their carts.

Produce like…fresh strawberries…blueberries…tomatoes…lime…mint…and red onions…

I know if I were a kid and I saw food the color of crayons all over my kitchen, I’d want to see what was going on. I would need to get my nose in there. This is a fantastic and simple recipe to get kids involved in the kitchen. A recipe that requires its chef to get in there and get his/her hands dirty; one where ingredients and measurements are easily adapted to meet the liking of the chef.

When my own kids were little, I was always on the look-out for those ever-present teachable moments. This recipe creates an opportunity to teach kids about kitchen safety, healthy eating, creativity and sharing.

And with July 4th just around the corner, this bright and summer-y salsa would make a perfect addition to any picnic or BBQ, lending itself to a discussion on what the “4th of July” is about. Teachable moment.

You can serve this salsa with chips or crackers, on top of a nice juicy piece of grilled chicken, or straight to the plate as a side salad…whatever is to the chefs liking, of course…

Ingredients

Scale
  • 1 large tomato, diced
  • 2 cups strawberries, finely chopped
  • 1 cup blueberries
  • 1/8 cup chopped mint
  • 1/3 cup chopped red onion
  • Juice from 1 lime
  • Pinch of salt

Instructions

  1. In a medium sized mixing bowl, add all the ingredients.
  2. Gently mix to combine.
  3. Place in a serving bowl.
  4. Refrigerate until ready to eat.
  5. Serve.

    Can’t believe I’ve never tried adding strawberries to my salsa – such a wonderful idea! It looks so beautifully vibrant and refreshing, especially with the mint. The photos are so inviting too!

    What a great organization Annie. I think it is super important to teach kiddos good eating habits from an early age so that they can grow up to be healthy adults. I was fortunate that my mother instilled these habit in me growing up. As for this salsa. It is stunning. I can’t wait to top my grilled chicken and fish with it.
