Strawberry Hazelnut Sweet Cream Scones are the perfect breakfast treat!

…or anytime treat, for that matter!

Sweet and tender, nutty and crumbly – these Strawberry Hazelnut Sweet Cream Scones are, in my opinion, the easiest fancy treat you can make.

If you’ve never made them – I am here to say, “Go for it!” If I can do it – you can do it!

Once you have a tried and true base recipe, the sky is the limit!

You can just as easily make a sweet scone as you can a savory by switching out your mix-ins.

Sweet was the way to go this time; I had enough strawberries left over from my strawberry rhubarb pie that my decision to use berries was an easy and obvious one.

Once spring hits – I can’t eat enough strawberries! And the addition of hazelnuts gives them just enough crunch. That little bit of added texture and nuttiness is perfection.

These scones have springtime holidays written all over them.

I can imagine these beauties on the Easter table, April Fool’s table, Mother’s Day table, Arbor Day table…the list is endless… 🙂

The day after I made them, Luc took a few to school to share with her pals, and they were good. However, I do think they’re best the day they’re made. All tender and light and warm and sweet. Mm.

Recipe notes:

  • Like pie, keep your refrigerated ingredients cold…your butter, your cream… This helps create the flaky layers we all adore.
  • Chop the berries and hazelnuts into small pieces.
  • Warm the Nutella for a few seconds in the microwave for optimum drizzle impact.
  • Enjoy them as soon as possible!

If these Strawberry Hazelnut Sweet Cream Scones hit your holiday table…I’d love to hear about it!

Buon Appetito!

Description

Strawberry Hazelnut Sweet Cream Scones are the perfect breakfast treat!

Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 Tbsp. baking powder
  • 1/4 tsp. salt
  • 8 Tbsp. chilled unsalted butter, cut into 1/2-inch cubes
  • 3/4 cup diced fresh strawberries
  • 1/3 cup chopped roasted hazelnuts
  • 1 1/4 cups chilled heavy cream, plus 1 Tbsp.
  • 1/4 tsp. vanilla extract
  • 1 Tbsp. Nutella

Instructions

  1. Line a large baking sheet with parchment paper and set aside.
  2. In a large bowl, whisk the flour with the sugar, baking powder and salt.
  3. Add the butter, and using your hands, rub it into the flour until pea-size crumbles form.
  4. Add the strawberries and hazelnuts and stir until just combined.
  5. In a separate small bowl, whisk the 1 1/4 cups heavy cream with vanilla extract.
  6. Pour the cream mixture into the flour and stir gently until everything comes together.
  7. Scrape the dough onto a lightly floured surface and using your hands form the dough into a round disk.
  8. Flatten the disk to about 1-inch thick and cut into eight wedges.
  9. Transfer the wedges to your prepared baking sheet, leaving 1 – 2 inches between them.
  10. Place the baking sheet in the freezer and freeze for about 20 minutes.
  11. In the meantime, preheat the oven to 400 F.
  12. Remove scones from the freezer and brush the tops with the remaining 1 Tbsp. of heavy cream.
  13. Bake the scones, rotating halfway through until risen and golden brown, about 20 minutes.
  14. Transfer the baking sheet to a rack and let the scones cool.
  15. Once the scones have cooled, warm the Nutella in the microwave for about 30 seconds. Stir until smooth then drizzle over the scones.
  16. Enjoy!
