I woke up to rain. Rain that fell straight as spaghetti. A tiny rumble of thunder in the distance. Skies that were gray, but not too gray. The color of a shiny nickel.

The dryer tumbled clothes with zippers and buttons clacking for attention; and truly – everything felt right.

Felt like home.
I thought to myself – what taste can I create in this very moment to capture this feeling of home?
A fruit crisp….
A strawberry crisp.
Strawberry because I happened to have them in the fridge; though you could easily substitute any fruit that is your favorite, or like me, one that you have on hand.

What is more homey than oats, brown sugar, cinnamon and melted butter baking and wafting throughout the house?
Oh, I know – warm fruit with a crispy topping veiled in sweet whipped cream.

Strawberry Crisp
Description
If you’re looking for the easiest, most satisfying, luscious Strawberry Crisp recipe ever…you’ve come to the right place!
Ingredients
1 cup all-purpose flour
½ cup packed light brown sugar
¾ cup old-fashioned rolled oats
2 tsp. ground cinnamon
¼ tsp. salt
8 Tbsp. unsalted butter, melted
6 cups chopped strawberries
1¼ cups granulated sugar
3 Tbsp. all-purpose flour
1 Tbsp. cornstarch
Instructions
Position a rack in the lower third of the oven and preheat to 350 F. Butter a 7 x 11-inch baking pan and line a baking sheet with parchment.
For the topping, in a medium bowl, stir together the flour, brown sugar, rolled oats, cinnamon, salt and butter. Set aside.
For the filling, in another medium bowl, combine the strawberries with sugar, flour and cornstarch. Stir to coat the fruit.
Pour the mixture into the prepared baking pan.
Sprinkle the oat topping over the prepared fruit.
Place the baking pan on the baking sheet.
Bake for 50 – 60 minutes, until the fruit is bubbling around the edges and the top is golden brown and crispy. Let cool slightly.
Serve the crisp warm.

Ice cream and whipped cream make divine toppings!
