Slow Cooked Rustic Italian Chicken

The only thing better than this dish waiting for you at the end of a busy work/school/mommy/daddy day is this dish waiting and served with a side of fuzzy slippers and comfy duds.

Oh yeah! We’re talking comfort!

Comfort food from a slow cooker. Does it get any better?

I’m excited to share this recipe with you for a couple reasons. A) The flavors in this dish are the bomb…there’s so much going on here between the great textures, beautiful colors and awesome flavors – it’s like a hug in a bowl, and B) This dish was born as a result of my invitation to advertise a fabulous opportunity that you have to win…and win big! So, yes…hug in a bowl…and it’s a hug that will last you for days because leftovers heat up beautifully for more meals and more hugs later in the week.

Can we talk about these tomatoes? They really are the star here. They’re sweet and delicious and create the perfect sauce for this hearty meal. And it’s important to note that the health benefits created by the antioxidant, lycopene, which is released when tomatoes are heated, are equally worthy of star status.

 

Slow Cooked Rustic Italian Chicken

You’ll want to serve the chicken over your favorite pasta and top with shredded Parmesan and chopped fresh basil. I used farfalle for a perfect little bite and a sweet presentation.

Ingredients

Scale
  • 2 lbs. boneless skinless chicken thighs
  • 3 large carrots, cut into 1/2 inch slices
  • 2 medium red bell peppers, chopped
  • 12 oz. fresh mushrooms, some sliced and the rest kept whole
  • 4 garlic cloves, minced
  • 2 Tbsp. Italian seasoning
  • salt and pepper to taste
  • 1 (14.5 ounce) can Redpack Diced Tomatoes in Juice
  • 1 (28 ounce) can Redpack Crushed Tomatoes in Thick Puree
  • 3 cups pasta of choice, cooked and drained

Instructions

  1. Spray slow cooker with cooking spray.
  2. Place chicken in slow cooker and top with remaining ingredients, except pasta.
  3. Cover and cook on LOW for 6 to 8 hours.
  4. Serve chicken over pasta and garnish.
  5. Top with freshly grated Parmesan and chopped fresh basil.

    How many servings is this? I work 12 hour shifts and love to prepare a meal for my three days in a row..can not wait to try it!!

      This will easily serve 4. Figure 1/2 lb. of chicken per person. But since it’s served over pasta – you might be able to stretch a couple more meals out of it. Thanks for your question, Susan! Enjoy!

    Ann….omg, I made this last night and it was SO tender and delicious! I served it over one of Wegman’s organic pastas called Girelle. It’s a heavy pasta but really good with this particular dish. I’ll be making this chicken again and again.

    yummm I can’t even say how much I LOVE pasta… this dish looks right up my alley (minus the chicken since I don’t do meat) but the rest is perfect, tomato sauce, pasta, garlic, mushrooms mmmm absolutely delicious!
