Roasted Delicata Squash with Brown Sugar and Onions has landed itself in my new fall favorites category!

Before we move on to the food portion of this program (okay, I’ve made that statement twice in the last few posts – I have no idea why… hahah), I wanted to take a moment to reflect on the sweet comments that many left the other day regarding the Halloween party from H#@%…

Some of you felt sad, some of you recalled your own similar moments, some of you empathized with your own adolescent children and some of you understood the need for bacon! For some reason I was propelled to share that story – not because the embarrassment still lingers, though, when I put myself at Michelle’s front door, it’s easy to recall those feelings; it’s a childhood memory that surfaces every year at Halloween. In my mind – it captures what so many pre-pubescent kids experience. And isn’t that what that stage is all about? If we can teach our kids that it’s okay to feel uncomfortable, that it’s actually part of the growing process, then we help them to understand that every emotion exists for a reason. We can survive feelings that are not so pleasant especially when we have folks in our corner, people to talk to, understand that we are not alone…and if none of that works – bacon (kidding not kidding)…hence the pumpkin chocolate chip bacon muffins. 😉

You can take the lady out of the school but you can’t take the school counselor out of the lady. Getting personal here… That’s okay – I’ll be very ‘delicata’ about it… Get it? Delicata? Delicate? That’s my silly segue to today’s post… I know, I know – I’ll move on…

On to the dish.

Oh my.

Have you had the good fortune of experiencing delicata squash? When roasted up with a little red onion and brown sugar, I would say, it’s to fall tastebuds what, ohhh, fruitcake or eggnog are to holiday tastebuds. A perfect seasonal bite!

Delicata Squash:

  • Is a winter squash with dark green lines on a yellow or cream-colored background
  • Has a sweet orange-yellow flesh
  • Has a milder flavor and thinner skin (so try not to upset it) 😉 than most squash
  • Goes by the names – peanut squash, Bohemian squash or sweet potato squash

Sometimes when food is roasted it can become too soft and lacking in texture…not this. Roasted up, the flesh becomes creamy while the skin softens ‘just enough’, becoming easy to chew and adding another layer of flavor.

So, as I continue on my quest toward filling my sidebar with orange food, I hope you’ll give this orange food a try. Roasted delicata squash, if I do say so myself, makes for a lovely Thanksgiving side dish. But you knew that.

I am all about roasting vegetables. It’s probably my favorite way to prepare them. Of course mashed is always good, fried has its place, boiled need not show up, but roasted takes the cake.

So set that oven to 425 F, slice up some delicata squash and prepare to be amazed by a vegetable that could quite possibly move to the candy aisle.

Roasted Delicata Squash with Brown Sugar and Onions

Ingredients

Scale
  • 2 lbs. Delicata Squash, seeds removed and sliced into half moons
  • 1 large red onion, sliced
  • 1 tsp. kosher salt
  • 1/2 tsp. black pepper
  • 2 Tbsp. brown sugar
  • 2 Tbsp. olive oil

Instructions

  1. Preheat oven to 425 F.
  2. In a large roasting pan combine squash, red onion, salt, pepper, brown sugar and olive oil.
  3. Stir to combine.
  4. Roast for 30 minutes or until tender and caramelized.
  5. Serve warm.

    Brown sugar and onions at first sounded strange and then I thought about how deliciously caramelized onions get in the oven and I totally started drooling- definitely need to try this 🙂

    Well I enjoy when you share personal stuff because I’m nosy. Ha, kidding. But really, I enjoy getting to know you more, Annie!! You are such a amazing lady with a heart of gold! And I think most people can relate to the awkwardness that is growing up! We’ve all felt out of place or uncomfortable before, and yes I have some memories that haunt me! Anyways, I love all squash, especially delicata, because it’s SOOO pretty! Love the little half moons with the cute curves! And I can totally see why you are having a love affair with this dish!     I just love the name of this squash – ‘delicata’. The name sounds so pretty and they look gorgeous. ‘Has a milder flavor and thinner skin (so try not to upset it’….that was too funny! I don’t recall seeing this type of squash around, but, then again, maybe I hadn’t ’cause I wasn’t looking. This sounds lovely paired with brown sugar and onions. Our thanksgiving is over for the year, but this would be absolutely perfect for Christmas. Such a great side, but I bet would even be a scrumptious meal with an egg. Easy peasy dinner. Done!
