Purple Potato Chips with Garlic & Rosemary is the fancy snack you didn’t know you needed!
Not since Starsky & Hutch, Lucy & Ethel and Fred & Barney has there been a duo as well-matched and recognizable as garlic & rosemary.
And together, they dress up this already fancy thick cut purple potato chip to create a flavor experience that will long be remembered.
I think it’s safe to say that this is the fashionista of potato chips. The supermodel, if you will.
And hey…it’s healthy(er) than your average potato. We’ve all been told that the more color on our plates, the healthier the meal…well – the same logic holds true for the potato. The darker colored the flesh, the better it is for us. The pigments in the darker potato contain flavonoids and carotenoids that promote good health, making it easier to enjoy a nice helping of chips.
I knew I’d find a way to make chips an acceptable part of a well-balanced diet.
It has been my goal since starting this blog! Just kidding…sorta…
Nick’s home for a few more days before returning to school so we got in the kitchen… He, with mandoline in hand, and I, with canola oil and sliced garlic to monitor, set out to make some thick cut purple potato chips with garlic and rosemary, together!
Thankfully I was able to grab enough chips for photos before we gobbled them all down. These are too good straight from the pan, sprinkled with coarse sea salt and chopped rosemary after being fried in garlic infused oil.
We set the mandoline slicer at 2 for thicker slices and cooked in small batches for a real kettle feel.
I tell you what…if you’re looking for an activity, on a cold winter’s afternoon, one that will produce the reward of a texturally pleasing, visually stunning, delicious experience.
Purple chips it is!

PrintPurple Potato Chips with Garlic & Rosemary
- Category: Appetizer
Ingredients
- 2 lbs. purple potatoes
- 4 cups canola oil
- 4 – 5 garlic cloves, thinly sliced
- Sea salt to taste
- 2 – 3 Tbsp. chopped fresh rosemary
Instructions
- Using a mandoline or a very sharp knife, thinly slice potatoes in uniform slices.
- Immerse slices in cold water and drain.
- Using paper towels, pat the potatoes completely dry.
- Set aside.
- In a heavy-bottomed pan, add garlic to the oil.
- Heat to approximately 365 degrees.
- Remove garlic before frying potatoes.
- In small batches, add the potatoes and cook for about 2 minutes, until golden.
- Remove from oil and drain on paper towels.
- Place in a bowl and sprinkle with sea salt and chopped rosemary.

And love the garlic and herb..I actually chopped a bit of the fried garlic and scattered it on the chips, too – but I’m not sure that people love garlic the way I do, so I left that out of the recipe… Stay warm! 🙂
