I was perusing Facebook the other day and saw not one, not two, but three autumn-inspired recipes. And as much as I love fall…fall cooking, fall fashion, fall foliage… I am nowhere near ready to embrace it.

We still have more than a month of summer, why rush it?

With sunshine and warm weather at a premium – let’s focus on every minute.

With that being said – I bring to you, today, another sweet summer peach recipe.

Peach Crostata. 🙂

You had to know that I had another crostata up my sleeve.

This open face pie – so quick and easy to prepare – has become my go-to dessert this summer.

I made plenty of my blueberry almond, and this peach crostata will ride us straight into the summer sunset.

Peach Crostata

I’ve done things a little differently with this crust…where I normally make my dough with all-purpose flour, I used spelt. I have in my pantry a large canister of spelt flour and it has been patiently waiting for me to dig in. This peach crostata seemed like the perfect opportunity to play. Spelt is a non-wheat flour and has a nutty and slightly sweet flavor. Plus – I love the rustic color that it produces, marrying well with my free-form tart.

INGREDIENTS FOR PEACH CROSTATA:

  • Peaches
  • Brown sugar
  • Cinnamon
  • Salted butter
  • Spelt flour (or you can use all-purpose)
  • water
  • Raspberry sorbet (optional)

This peach crostata, topped with a big scoop of raspberry sorbet, meets my summer cravings, and then some!

Description

Grab yourself some juicy peaches and make yourself this delectable Peach Crostata. You’ll be glad you did!


Ingredients

Scale

2 cups spelt flour (or all-purpose flour)

3/4 cup salted butter, chilled and cut into small cubes

1/2 cup plus 2 Tbsp. ice water

5 peaches, rinsed and sliced

1/4 cup brown sugar

1/2 tsp. cinnamon

milk for brushing crust

Raspberry sorbet for topping (optional)


Instructions

In a large bowl place the spelt flour (or all-purpose, or a combination of the two).

Mix with hands until everything is combined and dough becomes one solid mass.

Turn the dough onto a well-floured board and form into a disk.

Wrap the disk with plastic and refrigerate for at least 30 minutes.

Preheat oven to 400 F.

Cut a piece of parchment paper the size of the baking sheet. Set aside.

In the meantime, prepare peaches.

In a large mixing bowl, cut each peach into 8 slices.

Mix in brown sugar and cinnamon.

Remove dough from the fridge.

Sprinkle parchment with spelt and roll the dough on the parchment to form a 12-inch circle. (The spelt dough is a little stickier than all-purpose flour dough.)

Leaving about 1 1/2-inches around the perimeter, pile the the peaches in the center.

Gently fold the border up and around, pleating as you go.

Brush the edges with milk.

Bake for 40 minutes until the crust is golden and peaches are soft.

Allow to cool.

Serve at room temperature.


Notes

Sorbet is a nice topping!

    I love fall, but I’m not ready for summer to be over yet. I’m still enjoying all the summer produce, including peaches! This crostata is perfection Annie! Love that it looks loaded with peaches. And the raspberry sorbet is a nice touch!

    This is beautiful. And probably the only way I’d enjoy peaches besides eating them raw. (Or in cocktails.) I’ve been planning my posts into October, and I’m really ready to start fall cooking, but that’s just me. I’m not a summer person. the only thing that keeps me going is my garden, and the presence of beautiful fresh fruit like peaches.

    Love rustic desserts. No worry about perfection and getting that crust just right. Nope! Just juicy fruit in a delcious crust. Wish I had a serving of it now with my coffee. And I agree with you. I’m nowhere close to being ready for Autumn. I want to savor summer for a bit longer.
