One Pan Roasted Citrus Glazed Salmon with Brussels Sprouts is easy and delicious! The perfect weeknight meal!
This healthy one pan recipe which combines Brussels sprouts and salmon is one of my new go-to meals of the season. Over break my daughter Chelsea made a believer out of me! Up until Chels prepared this lovely meal for us – I was not a fan of salmon. Can you believe it? I guess I just needed Chels to show me the way! So tender and flaky, it’s a seafood I can get behind….probably on a weekly basis!
Other than the small skillet that you’ll use to combine your glaze ingredients, the rest is done on one sheet pan. Even your Brussels sprouts are seasoned and stirred on the pan. And clean-up’s a breeze if you use parchment paper.
WHAT DO WE LOVE ABOUT THIS EASY SALMON RECIPE?
With delectable punches of flavor, from chili to citrus and garlic to ginger, this healthy meal is dressed up in grand fashion! The heat of the chili and cayenne (which you can adjust to suit your taste!), and the brightness of the lemon and parsley will make your mouth sing! The glaze for this salmon fillet is nothing short of luscious!
HOW TO MAKE ONE PAN ROASTED CITRUS GLAZED SALMON WITH BRUSSELS SPROUTS:
- Preheat the oven to 400 F.
- Line a baking sheet with parchment. Add the Brussels sprouts, olive oil, salt and pepper to the pan. Stir to combine.
- Roast for 15 minutes.
- In the meantime prepare the glaze. In a small pan set over medium heat, add the butter, minced garlic, ginger, onion powder, paprika, cayenne, chili paste and 3 Tbsp. chopped parsley.
- Stir for about 1 minute until everything is combined. Add juice of 1 lemon. Set aside.
- Prepare salmon. With a paper towel, dab both sides of the salmon dry, then using a sharp knife, cut 4 slits on the top. Season with salt and pepper.
- Remove Brussels sprouts from the oven and make room on the same pan for the salmon.
- Rest salmon in the center and brush with the spice mixture making sure the entire surface is covered.
- Top with sliced lemon and bake until cooked through, about 15 – 20 minutes (or your preference of doneness).
- Remove from oven and finish with another squeeze of lemon juice and chopped parsley.
VARIATIONS ON ONE PAN ROASTED CITRUS GLAZED SALMON WITH BRUSSELS SPROUTS:
- You can change up the veggie to suit to your taste…asparagus is another one of our many favorites!
- If you’d prefer less spice but equal flavor – you could simply use minced garlic, butter and herbs as a topper.
- You can slice up potatoes and roast them ’til crispy for a delicious and healthy spin on fish and chips!

Ingredients
1 lb. Brussels sprouts

Notes
When the thickest part of the fish can be flaked with a fork, it’s done.
