Sometimes life calls for chocolate.
I guess there’s really not much else to say.
Except that this recipe meets that need, and then some.
Do you remember the ol’ Chunky candy bar? Milk chocolate, peanuts and raisins? It came on the scene back in the mid-1930’s, and happened to be a favorite of Dom’s when he was a kid (in the late-1960’s 😉 ). Truly a nostalgic bite – this fudge is extra-special.
I happened to have everything I needed, so “Chunky” fudge it was…
INGREDIENTS:
- 18 oz. milk chocolate chips (or any chip to your liking, i.e. semi-sweet, dark)
- 14 oz. sweetened condensed milk
- 1 cup chopped peanuts
- 1 cup raisins
DIRECTIONS FOR MAKING MILK CHOCOLATE FUDGE WITH PEANUTS & RAISINS:
- Line an 8×8 baking pan with parchment paper. Be sure the parchment is long enough to come up and over the sides of the pan to create handles for removing the fudge later.
- In a microwave safe bowl, add the chocolate chips and sweetened condensed milk. Microwave the mixture for 20 seconds. Remove the bowl and stir. Continue heating in 20 second intervals until the chocolate is melted and smooth.
- Fold in the peanuts and raisins.
- Pour the fudge into the prepared pan and smooth the top with a silicone spatula.
- Chill in the refrigerator for 1 – 2 hours, until fudge is firm.
- Remove the fudge from the pan and cut into 1-inch square pieces.
