Hey friends! I don’t normally post on Thursday but I couldn’t resist sharing this refreshing Mango & Lime White Wine Slushy as soon as I had the idea for it! #thirstythursday

I cannot take full credit for the concept. Last weekend Dom and I celebrated our anniversary at one of our favorite places and before dinner we made our way to their gorgeously appointed bar that sits just outside the dining room. Very romantic, with its dark wood, ornate chairs, cozy tables and mood music – we each ordered a drink. Dom’s cocktail was along the lines of a smoky tasting Bourbon Old Fashioned…not my thing…though it was beautiful with its muddled orange and bright red cherry, I ordered a long time favorite, Bellini. Not your typical Bellini made with ripe white peach puree and Prosecco, this was prepared with mango puree, a splash of lime juice and Prosecco.

Gosh, that was good.

So good, I had two.

In pretty standard fashion, I couldn’t wait to get home and play around with recipes based on our meal. I was excited to try my hand, first, at this simple yet delicious cocktail. Normally we have Prosecco in the house, but for some reason, not this time. And rather than go out to grab a few bottles we took a gander at the wine rack and noticed a bottle of Swedish Hill Vignoles Late Harvest. This is not a sponsored post but I’m so happy to have the chance to tout the deliciousness of this award winning wine.

Though absolutely perfect tasting on its own, with rich flavors and aromas of apricot, honey and ripe melon, we had some fun adding frozen mango, a splash of lime and a handful of ice to this already fruity tasting sweet white.

With all the jubilant spring and summer holidays that are just around the corner, cocktails like this make perfect sense. Pretty, refreshing, icy and delicious…I’d say this will work for any small or large gathering you have planned. This recipe calls for a cup-a cup-a cup per one cocktail…. A cup of frozen mango, a cup of sweet white wine, a cup of ice and freshly squeezed juice from quarter of a lime, then top with a paper thin slice of lime…

A little bitta tropical and a whole lotta colorful, this cocktail is sure to be a hit! Mother’s Day, Memorial Day, Father’s Day, 4th of July, Labor Day…

Ingredients

Scale
  • 2 cups frozen mango chunks
  • 2 cups sweet white wine
  • 2 cups ice cubes
  • juice from 1/2 fresh lime

Instructions

  1. In a blender, combine mango, wine, ice and fresh lime juice.
  2. Puree until smooth.
  3. Pour mixture into two chilled glasses.
  4. Top each with a thin slice of lime.
  5. Enjoy.

    Oh my gawd!!!!!! Bellini is one of my favorite drinks and loving this made with mango! I always have frozen mango chunks on hand and I happen to have a bottle of Prosecco in the garage refrig. YAY!!!! I’ll be making this drink on Saturday with the Prosecco and will think of you Annie. Next time I’ll try it with the sweet white wine 🙂

    Now I’m not a big wine drinker – but that white on it’s own with undertones of apricot, honey and ripe melon sounds wonderful – but then you went and added frozen mango, lime and ice and made it pretty EPIC! Annie – this is such a delightful slushy to enjoy these warmer temps with!
