Italian-Style Kumquat Mojito

During a recent trip to Trader Joe’s we stumbled upon a large display of teeny oval citrus-y baubles. These baby fruits, taking their color cue from the deep coral rays of a setting sun, caught my eye.

These sweet skinned, tart fleshed, tangy fruits coaxed me to look.

They knew they were beyond peak (which ends roughly with winter) but they also knew their job was not done. Little rebels that they are, hung in to make at least one more person happy. Okay, two.

I mean, there are still bowls of ice cream to be decorated, pound cakes to be adorned and Mojitos to be made.

My first idea was to candy them and strewn them over vanilla cream, but then I thought, oooooh – glaze a molten mountain of chocolate cake, how fabulous would that be…and then, with my wheels still turning, it hit me!

Hubby makes the best Mojitos! Done!

Italian-Style Kumquat Mojito

I can’t think of a more suitable cocktail to mark the occasion of, you guessed it, ending our project. Fizzy, fruity, minty and refreshing. A perfect goodbye to construction dust. A perfect hello to (our more typical) bunnies of dust.

We’re taking the traditional mojito, normally made from white rum, sugar, lime juice, sparkling water and mint, and rounding the corner with it. By adding the kumquat and replacing the sparkling water with a splash of Prosecco, we’re adding a kiss of Italy, to our drink.

Okay, we’ll add two splashes…a kiss-kiss – both cheeks!

Ingredients

Scale
  • 2 kumquats, quartered and seeded
  • 12 fresh mint leaves
  • 4 lime slices
  • 2 oz. Rum
  • 2 oz. sugar water (Bring to a boil one cup water with one cup sugar. Remove from heat when sugar is dissolved. Let cool. Ready for use.)
  • 1 oz. Prosecco
  • Sprig of mint and slice of kumquat for garnish

Instructions

  1. In the bottom of your cocktail glass, muddle the kumquats, mint leaves and lime.
  2. Next, half fill the glass with crushed ice, add the rum and sugar water and stir vigorously.
  3. Top with more crushed ice, a splash of Prosecco a sprig of mint and slice of kumquat.
  4. Serve.
