Ingredients
Scale
- 2 kumquats, quartered and seeded
- 12 fresh mint leaves
- 4 lime slices
- 2 oz. Rum
- 2 oz. sugar water (Bring to a boil one cup water with one cup sugar. Remove from heat when sugar is dissolved. Let cool. Ready for use.)
- 1 oz. Prosecco
- Sprig of mint and slice of kumquat for garnish
Instructions
- In the bottom of your cocktail glass, muddle the kumquats, mint leaves and lime.
- Next, half fill the glass with crushed ice, add the rum and sugar water and stir vigorously.
- Top with more crushed ice, a splash of Prosecco a sprig of mint and slice of kumquat.
- Serve.
