Breakfast for Dinner

There are two kinds of people. Those who will only eat breakfast in the morning and those who will eat it anytime of the day or night…I fit into the latter. Eggs and bacon? Bring it! Waffles? Nothing better! Fresh fruit, Bagels, Peanut Butter Crunch? Try to keep me away! Any of these foods at anytime… Make. Me. Happy! Breakfast food with a fresh pot of coffee, really, I could live on it.

What’s it all about?

Is it that fueled up feeling that gives us a sense of “I am ready to take on the world!”?

Is it the sound, sight and smell of butter sizzling and slowly melting in a frying pan as it readies itself for the world’s most perfect food? An egg!

Is it the aroma that fills the house and brings people running without having to stand over the stove for hours?

Yes, yes, and yes. We could probably come up with a million reasons to support the perfection of breakfast…

Let’s make that a million and one.

For me, the perfection of breakfast actually comes in the form of popcorn. Let me explain…when I was a kid and we had breakfast for dinner it was always coupled with hot, salty, delicious popcorn as an evening treat. Whenever Ma said, “It’s a popcorn night” we subconsciously knew it was a breakfast for dinner night. I think she thought that the popcorn would somehow erase the slightness of dinner, never realizing how much we really loved it…how much it really filled us up…

But then again – french toast and popcorn – not so bad either!

French Toast

Ingredients

Scale
  • 4 eggs
  • 2 tsp. cinnamon
  • 8 thick slices of bread
  • Butter
  • Maple Syrup
  • Optional Toppings: Bananas & Fresh Berries

Instructions

  1. Beat eggs and cinnamon together.
  2. Pour mixture into a shallow bowl.
  3. Dip each slice of bread into the egg mixture, allowing bread to soak up some of the mixture.
  4. Melt some butter in a large skillet over medium-high heat.
  5. Add as many slices of bread onto the skillet that will fit.
  6. Fry until both sides are golden-brown (flipping as necessary).
  7. Serve hot with butter, syrup, and if available, fresh fruit.

    I remember Mema making “Breakfast for dinner” – she would make pancakes! What a great memory!

      I remember that too! Lots of great memories were born in Mema’s house! Okay, here’s another…soft boiled eggs and Spaziani toast! Thanks for keeping that flood-gate open, Raf!
