Blackberry Crisp

Sweet blackberries topped with a buttery oat crumble comes together pretty quickly to make a Blackberry Crisp that is sure to please a crowd!

If you’re anything like I am then you like crispy food. Of course soft food has its place too, like – mashed potatoes, puddings, milkshakes and ice creams.

But if push comes to shove, I am all about the crunch! And the crunch of this crisp has my name, and hopefully yours, written all over it!

It’s as simple as this:

  • In one bowl you’ll combine blackberries, sugar, flour and cornstarch.
  • Stir to coat, then pour into a buttered 7 X 11-inch baking pan.

  • In another bowl, stir together flour, brown sugar, rolled oats, cinnamon, salt, butter and canola oil.
  • Pour the mixture overtop the berries, rest pan on a parchment lined cookie sheet, and bake.
  • Remove from the oven when the fruit is bubbling up over the sides and the top is crispy.

  • Allow it to cool.
  • Add your favorite ice cream.
  • Enjoy!

I decided to go with blackberries simply because Dom brought home a bunch, but you can substitute any berry you’d like.

Description

Sweet blackberries topped with a buttery oat crumble comes together pretty quickly to make a Blackberry Crisp that is sure to please a crowd!


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 3/4 cup old-fashioned rolled oats
  • 2 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 8 Tbsp. cold unsalted butter, cut into 1/2-inch cubes
  • 1 Tbsp. Canola oil
  • 6 cups blackberries
  • 1 1/4 cups granulated sugar
  • 3 Tbsp. all-purpose flour
  • 1 Tbsp. cornstarch

Instructions

  1. Position a rack in the lower third of the oven and preheat to 350 F. Butter a 7 x 11-inch baking pan and line a baking sheet with parchment.
  2. For the topping, in a medium bowl, stir together the flour, brown sugar, rolled oats, cinnamon, salt, butter and oil with a fork. Set aside.
  3. For the filling, in another medium bowl, combine the blackberries with the sugar, flour and cornstarch, stirring to coat the fruit.
  4. Pour the mixture into the prepared baking pan.
  5. Sprinkle the topping over the fruit.
  6. Place the baking pan on the prepared baking sheet.
  7. Bake for 50 – 60 minutes, until the fruit is bubbling around the edges and the top is golden brown and crispy. Let cool slightly.
  8. Serve the crisp warm.
  9. A scoop of ice cream is a lovely addition!

    I LOVE LOVE LOVE crispy food – and having this GORGEOUSLY DELICIOUS crisp in front of me – without any serving bowls and just a spoon could be trouble cos I also happen to believe that sharing is overrated! 🙂

    I’m all about the crisp too, Annie and I adore blackberries. Mid summer they grow wild (although invasive) here, so we take full advantage. A crisp is a must! Delicious work!

    When I was a kids we used to pick buckets of wild blackberries from the woods around our house in the summer. And this is such a great way to use them. I love crisps – they are so easy to make and so delicious – everyone loves them! Pinning!
