I had the good fortune of photographing recipes for Jones Dairy Farm this summer. We kicked off the journey with these Baked Mushroom & Chicken Sausage Bowls, and ManOhMan… I. was. hooked.

Since then, I’ve used their fully cooked chicken sausage and other delicious meats in a number of meals – especially at breakfast.

So this got me thinking, with long weekends and holidays just around the corner, there’s a greater likelihood that we’ll entertain weekend visitors, and if you’re anything like I am – creativity at mealtime coupled with simplicity is high on the list of must-dos.

Who doesn’t want to be greeted by their own little crock of breakfast all tasty and smelling yummy? And not only will the aromas beckon your guests to the kitchen, the sound of silverware may have them running, too.

Do you know what I mean by that? The sound of silverware…

I love the sounds that breakfast makes – the pop of the toaster, the scrape of a spatula, the pour of hot coffee, the jangle of a handful of forks… There’s something so comforting about a noisy breakfast. Especially when someone else is conducting. Who’s with me?

Okay – back to food…

Not only is this recipe gratifying, it’s versatile.

We’re using mushrooms, red peppers and green onions to complement the chicken sausage and baked eggs, but you could use most any veggies. And because Jones Dairy Farm uses only the finest quality ingredients in every product they make—from their all-natural, Certified Gluten-Free sausages to their naturally smoked, dry aged bacon, it makes using their chicken sausage an easy and wonderful addition.

Once your Mushroom & Chicken Sausage Bowls have baked for about 15 minutes – give ’em a little shake of salt and pepper, pour your coffee, make your toast and enjoy.

Baked Mushroom & Chicken Sausage Bowls

Ingredients

Scale
  • 1 tablespoon vegetable oil
  • 8 ounces fresh mushrooms, sliced
  • 1 red bell pepper, chopped
  • 1/2 cup green onions, thinly sliced
  • 1 (5 oz) package Jones Dairy Farm All Natural Golden Brown® Breakfast Sausage Links, thawed and sliced
  • 4 eggs
  • Kosher salt and ground black pepper

Instructions

  1. Preheat oven to 400°F.
  2. Heat oil in 10-inch, nonstick skillet over medium heat.
  3. Add mushrooms and peppers and cook until tender, about 10 minutes.
  4. Remove from heat and stir in green onions and chicken sausage.
  5. Divide sausage mixture equally between 4 oven safe ramekins.
  6. Crack 1 egg into center of each cup.
  7. Transfer cups to rimmed baking sheet.
  8. Bake until egg whites are almost set, about 15 minutes.
  9. Season with salt and pepper before serving.

    I absolutely love those little colorful crocks! I’m absolutely with you on the sounds of breakfast – especially if I’m in bed and someone else is cooking! 🙂 I’m sure these breakfast bowls would be a hit in my house! What a perfect way to start your day!

    Yay for noisy breakfasts!! I can’t understand why some people don’t eat breakfast. I love it! During the week, it’s usually something super quick as I’m going through the door, but on the weekend? Watch out! These bowls are where it’s at, Annie. I just love that everyone gets there only little dish (those dishes are ADORABLE, by the way) and it is relatively quick to put together. I bet these would be lovely for dinner, too, with maybe a salad or something. Pinned, of course. Have a wonderful week, my friend! xoxo

    Oh what a tasty breakfast dish, Annie! For some reason, food in bowls just seem to taste better. And anything with mushrooms is a winner in my book! I will have to try those sausage links, sounds delicious and perfect for these bowls!
