Don’t tell me that you don’t have time…you do… you can make time.

It takes just minutes. Minutes to toast up a little bread and load it up good with scrumptious toppings that are as fresh and colorful as an April day is misty and promising.

I started this journey thinking it’d be all about the pleasing sweet flavors of juicy strawberries, plump blackberries and crunchy sprouts set atop creamy avocado, until mini sweet peppers caught my eye.

And if I was going to adorn two avocado crostini, I might as well adorn four. Ya feel me?

So, tomato & basil and prosciutto & zucchini joined the party…

Fresh and light, springy and flavorful, each has a personality all their own, yet they still have one very important thing in common——->they’re undeniably delicious!

To make (these) Avocado Crostini:

  • Toast 4 slices of thick, crusty Italian bread
  • Spread each with 1/2 ripe, fresh, mashed avocado and a good squeeze of lemon juice
  • On each crostino (individual toasts), place toppings: fresh fruit and sprouts; roasted sweet red and yellow peppers; cherry tomatoes & basil; ribbons of prosciutto & zucchini
  • Finish each with sea salt and cracked black pepper to taste

Ingredients

Scale
  • 4 slices crusty Italian bread
  • 2 ripe, fresh Avocados, peeled, seeded and mashed
  • Juice of 1 lemon
  • 3 strawberries, sliced thin
  • 4 blackberries, halved
  • small handful of sprouts
  • 12 oz. mini sweet peppers
  • 1 – 2 Tbsp. olive oil
  • 4 cherry tomatoes, halved
  • 4 basil leaves
  • 2 thin slices prosciutto
  • 2 thin vertical slices zucchini
  • Sea salt & cracked black pepper, to taste

Instructions

  1. Preheat oven to 400 F.
  2. Place peppers on a sheet pan, drizzle with olive oil, add salt and pepper and roast for about 30 minutes until skins are browned.
  3. Toast 4 slices of thick, crusty Italian bread.
  4. In a medium bowl, place seeded and peeled avocado. Drizzle in the juice of 1 lemon and mash until combined.
  5. Spread each piece of toasted bread with avocado.
  6. On each crostino (individual toasts), place toppings: fresh fruit and sprouts; roasted mini peppers; cherry tomatoes & basil; ribbons of prosciutto & zucchini.
  7. Finish each with sea salt and cracked black pepper to taste.

    Oh my, I am gushing over the berries atop the creamy avocado. They all look lovely, but the peppers is a close second.
    I love that your crostinis evolved as you spotted new peppers! Love your creativity.

    Our April morning is loaded with snow. Really, So-much-snow! I need something to distract me from packing and heading to the airport straight to Rome, and your crostini are doing just that. Beautiful looking and with flavors to die for. These are happening soon in our kitchen to keep Spring alive!

    I can’t decide which one I like best, Annie but I’m leaning toward the tomato version even though the roasted red pepper one is calling my name too. I love avocado toast and look forward to trying some of these topping – such a good easy healthy lunch! Hope you’re having a good weekend.

    Ohh Annie! This crostinis look so good! this reminds me of my childhood, in my house toasted bread, smashed avocado, salt and olive oil was a big thing.. but you have bring that to another level… loving how simple can be wonderful!

    Hahahahaha! I like the way you think, Annie! I mean, if you’re going to make two crostini, I agree, you might as well make 4… or 5! And then you might as well just forget your plans for the day, stay in and eat crostini on repeat! 🙂 All of these are just gorgeous, my dear! And you know what’s funny?! Those tiny sweet peppers caught my eye at the store too! So I happen to have a bag just begging to be used! Yay! I see an array of crostini in my immediate future!     You make it too easy, Annie! I’m just sitting here, finished my smoothie and coffee and now wishing I had this in front of me….and not just on a computer screen. Avocado is one of my favourite things EVA! And do you know that once upon a time a long time ago I didn’t care for??? What? Now, our fridge is always packed with them. Wishing I had picked up some of this little baby peppers last night at the grocery now too. I may just have to make a trip back – twist my arm to go to the grocery, lol 😀 Pinning this yumminess!
