Description

Tender sliced RubyFrost apples dotted with shredded cheddar and warm spices, tucked into a pretty buttery crust, is what Apple Cheddar Pie is all about!


Ingredients

Scale
  • 2 cups all-purpose flour
  • ¾ cup cold salted butter, cut into cubes
  • ½ cup ice water plus 2 Tbsp.
  • 7 – 8 RubyFrost® apples, sliced
  • ¾ cup sugar
  • ¼ cup brown sugar
  • 2 tsp. cinnamon
  • ¼ tsp. nutmeg
  • 2 tsp. lemon juice
  • 2 Tbsp. flour
  • 1 cup shredded sharp cheddar

Instructions

  1. Combine 2 cups flour, cold butter and water in a large mixing bowl.
  2. Mix with your hands until all ingredients are well combined.
  3. Pat dough into a disc and wrap in plastic wrap.
  4. Chill in the refrigerator for 60 minutes.
  5. In the meantime, preheat oven to 425 degrees.
  6. In a large bowl combine apples, sugar, brown sugar, cinnamon, nutmeg, lemon juice, flour and shredded cheddar.
  7. Remove dough from the refrigerator and cut in half.
  8. Roll out each half. Use for the bottom and top crusts.
  9. Place first (bottom) dough in the pie plate.
  10. Fill with the apple mixture.
  11. If desired, make decorative cut outs with the remaining dough, and place on top.
  12. Crimp edges; if you’re not using decorative cut outs, poke holes in the top to release steam.
  13. Bake for 50 – 60 minutes.
  14. Remove when golden brown.

    Do you know I’ve never tried cheddar cheese with my apple pie? I’ve certainly heard of it before, but never given it a try. This pie is stunning. I love how you’ve cut out all those leaves. It makes quite a beautiful presentation!

    When I saw this pie on IG, my mouth started watering. I mean, cheddar? So smart Annie. I don’t think I’ve ever had a pie like this, but am all IN! It’s been too long since I made apple pie. I’ll be at the Co-Op this weekend and plan on picking some up. I’ll be on the look out for these Ruby Frost apples. Gorgeous work!!

    What a stunning pie! I’m sure it is as delicious as it looks! Growing up, my mom always served a slice or two of cheddar with apple and raspberry pies. I continue her tradition – even love it with coconut creme pie. I have to try this!

    This pie is beyond pretty! I love the way it’s put together with the intricate leaf cutouts, allowing a little peak inside as well as a ingenious way of releasing steam! I love apples in baked desserts or oven roasted alongside potatoes, it’s all good?
