Description
When the temperatures drop below freezing, this salad, made of Wintery Greens, Avocado, Berries, Pistachios and Tahini Dressing helps us forget all about Old Man Winter!
Ingredients

- Tahini Dressing
- 1/2 cup tahini
- 1/4 – 1/3 cup fresh lemon juice
- 1 small garlic clove, minced
- 1/4 tsp kosher salt
- 3 – 5 tsp cold water
- Salad
- 3 ounces torn dandelion greens
- 3 ounces baby arugula
- 1 medium carrot, peeled and sliced into ribbons
- 1 firm avocado, pitted and cubed
- 1/3 cup each of your favorite berries
- 1/2 cup pomegranate arils
- Kosher salt and freshly ground black pepper, to taste
- 1/3 cup chopped pistachios
- 2 – 3 Tbsp. chia seeds
Instructions
- For the dressing, in a small mixing bowl, whisk together the tahini, lemon juice, garlic, salt and water until smooth. Taste and adjust seasoning as needed. Set aside.
- For the salad, in a large bowl, combine the greens, carrot ribbons, avocado, berries, pomegranate arils, a pinch of salt and pepper.
- Drizzle the dressing and toss to combine.
- Adjust the seasoning to taste.
- Sprinkle with chopped pistachios and chia seeds.
- Serve.
