Two-Bite Chocolate Chip Brownies

Ingredients

  • 1/2 cup vegetable oil
  • 1 cup white sugar
  • 1 tsp. vanilla extract
  • 2 eggs
  • 1/2 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees.
  2. Prepare two mini muffin tins with small cups.
  3. In a medium bowl mix the oil, sugar and vanilla.
  4. Beat in the eggs.
  5. In a small bowl combine flour, cocoa, baking powder, salt and chocolate chips.
  6. Slowly stir flour mixture into the egg mixture until well blended.
  7. Pour batter into the muffin cups.
  8. Bake for 18-20 minutes until the top starts to crackle.
