- 1/2 cup vegetable oil
- 1 cup white sugar
- 1 tsp. vanilla extract
- 2 eggs
- 1/2 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/4 tsp. baking powder
- 1/4 tsp. salt
- 1/2 cup chocolate chips
Instructions
- Preheat oven to 350 degrees.
- Prepare two mini muffin tins with small cups.
- In a medium bowl mix the oil, sugar and vanilla.
- Beat in the eggs.
- In a small bowl combine flour, cocoa, baking powder, salt and chocolate chips.
- Slowly stir flour mixture into the egg mixture until well blended.
- Pour batter into the muffin cups.
- Bake for 18-20 minutes until the top starts to crackle.
