Spicy Pickled Red Onions

Ingredients

  • 2 large red onions
  • 1 jalapeño
  • 2 plump cloves of garlic
  • 3/4 cup apple cider vinegar
  • 2 tsp. kosher salt
  • 1/4 cup sugar

Instructions

  1. Slice the onions and jalapeño into fairly thin rings and the garlic into thin slices.
  2. Put 4 cups of water into a small pot. Stir in the vinegar, salt and sugar, then bring the liquid to a boil.
  3. Add the onions, jalapeño and garlic, bring back to a boil and simmer for 3 minutes.
  4. Remove from heat and allow the onions to sit in the liquid for an hour, then drain.
  5. Refrigerate until ready to use.
