Spaghetti with Lemon, Garlic & Fresh Herb Olive Oil

Bright splashes of lemon and a drizzle of fresh herb olive oil give this easy garlic spaghetti the feeling of being in Capri on a beautiful sunshine day.

The chilly gray days are upon us my friends. They are here. They’ve arrived.

It’s okay…we just need to be tougher than they are.

We need to shut ’em down.

Show ’em who’s boss.

Make them slink away and hide…

We can do this thing!

This dish comes together in minutes…

You’ll cook your spaghetti in a large pot of of boiling salted water, until al dente (firm to the bite), and then drain, reserving about 1/2 cup of the pasta water.

Then toss the pasta directly in the pan that contains your lemon, garlic and fresh herb olive oil.

Add a little reserved water, salt, pepper and red pepper flakes…

Ingredients

Scale
  • 1 lb. dried angel hair spaghetti
  • 3/4 cup olive oil
  • 1 tsp. grated lemon zest
  • 2 Tbsp. fresh lemon juice
  • 3 – 4 garlic cloves, minced
  • 1 cup fresh flat-leaf parsley (or basil) chopped
  • salt & pepper to taste
  • 1 tsp. red pepper flakes

Instructions

  1. Cook pasta in a large pot of boiling salted water until al dente.
  2. Drain, reserving about 1/2 cup pasta water.
  3. In a separate large pan, add lemon zest, lemon juice, minced garlic and fresh herbs to the olive oil.
  4. Heat through.
  5. Add pasta to the olive oil and a little reserved water as needed.
  6. Add salt, pepper and red pepper flakes.
  7. Stir to combine.
  8. Serve.

      I am a man but when I retired I took over the kitchen. I can cook also I am Italian (1/2 Piazza) and love this type of food and cook anything. Can’t wait to try it most likely will be this week end. By the way I told my wife I felt bad about taking her kitchen away from her 14 years ago and she could have it back if she wonted it. Her answer”When hell freezes over and you film it.” guess that means I am the cook and bottle washer. I also have a large BBQ pit on a trailer which I cook for the whole family and friends on most holidays so she has it made.
