Ingredients

  • 1 cup butter, room temperature
  • 2/3 cup sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  • 2 1/2 cups all-purpose flour
  • Icing
  • 1 1/2 cups powdered sugar, sifted
  • 2 Tbsp. butter, melted
  • 2 Tbsp. milk
  • 1 tsp. vanilla
  • 1/2 tsp. lemon juice
  • blue food coloring

Instructions

  1. For the cookies, add butter and sugar to a large bowl and mix until light and fluffy.
  2. Next, add the egg, vanilla, salt and flour. Mix until fully combined.
  3. Chill dough for about an hour.
  4. Preheat oven to 350 F.
  5. Roll out the dough to about 1/4-inch thick, and using the cookie cutter, form cookies.
  6. Place on cookie sheets and bake for about 10 minutes or until cookies are firm.
  7. Remove cookies from sheets and cool on wire racks.
  8. For the icing, combine all ingredients and beat until smooth.
  9. Separate frosting in individual bowls and add food coloring to create different gradations of color.
  10. Frost, decorate, and eat!
