Apple, Walnut and Chicken Spinach Salad

Ingredients

  • Salad
  • 10 ounces baby spinach
  • 3 apples, cored and thinly sliced
  • 1 cup chopped walnuts
  • 4 ounces feta, crumbled
  • 1/2 cup dried cranberries
  • 1 lb. chicken tenders, grilled
  • 1 small red onion, sliced into thin strips, grilled
  • Apple Cider Vinaigrette
  • 1/2 cup olive oil
  • 2 tsp. apple cider vinegar
  • 4 tsp. balsamic vinegar
  • Salt and pepper, to taste

Instructions

  1. In a large serving bowl, combine spinach, apples, walnuts, feta and cranberries. Set aside.
  2. In a grill pan, over medium heat, cook chicken fully and until grill marks form.
  3. Once chicken is cooked, grill sliced onions until soft and slightly caramelized.
  4. Top salad with chicken and onions.
  5. In the meantime, combine olive oil with both vinegars and a pinch of salt and pepper.
  6. Shake vigorously.
  7. Top salad with dressing.
